Rated 5 out of 5 by from A sharp bread knife This is a great Japanese bread knife. I really like the feel of the handle on this blade, it’s very comfortable and contours nicely. The blade has a nice lighter weight to it, but is very sharp. This is a great knife collection if you want to go from Western style knives to Asian. With the Evolution, it brings the two styles together with the German proprietary ice hardening technique of the FC61 steel, making it a much more durable and sharp Japanese bread knife. This is a really great knife, perfect for slicing large pieces of bread, meat and fruit with ease and minimal slices, while preventing tearing from the slices.

The Evolution line is a style of knife that inspires loyalty and lifelong love. It is a hybrid of Japanese and German knife making traditions. The handle is a perfect example. It is a little heavier like a German knife, but a little narrower like a Japanese knife. The steel that the blade is made of is German and the craftsmanship is Japanese. The combination is a hard durable blade that stays sharp for a long time. Because it is serrated, maintenance is minimal. Dishwasher safe, but hand wash to retain the beauty and look of new.

It is one of the often used knives in my household and I since I serve bread with every meal at the table, I want a great bread knife to put out as well. The serration on this is fantastic and glides through your artisan breads like butter! Some serrations tear the bread, which makes a huge mess, but the serration on this knife is sharp and perfectly shaped.

It is not by surprised that this knife is versatile, despite being serrated blade it is great to cut through leafy vegetables. This is perfect for cutting breads, bagel and baguette effortless. This knife is from a super steel Japanese knife, made from revolutionary fine carbide FC61 steel, these knives offer the signature dry sharpened blade boasts scalpel-like sharpness for which Japanese knives are known. It takes more than 100 steps and 42 days to create one knife worthy of the MIYABI brand. Ice-hardened FRIODURx2 blade offers exceptional durability, cutting edge retention, and corrosion resistance. This exquisite, hand-hammered effect helps prevent food from sticking. Hand wash is recommended. Manufacturer's lifetime warranty for any manufacturing defects.

Rated 5 out of 5 by from Amazing Bread Knife It's a cross between Japanese and German: three rivet, curved handle is perfectly comfortable and my personal perference. The blade is all Japanese with it's amazingly sharp, serrated blade. But what makes it so amazing is how durable it is; it's made from a new type of steel, FC61, which is extremely durable and chip resistant. Slices through any hard loaf of bread with greatest of ease.

Rated 5 out of 5 by from Fabulous bread knife from Miyabi with a perfect length for artisan bread and cakes. Very approachable, easy to care for and familiar in the hand. Made from superior FC61 stainless steel these knives are more chip and corrosion resistant than most Asian steels and will continue to have a strong serrated edge for much longer. The POM handle is smooth and feels secure even when wet.

The bread knife has an incredible serrated edge that effortlessly cuts through crispy exterior without squishing the softer interior. The blade is mirror polished and made from FC61 steel that is incredibly hard so it will stay sharp for a lifetime and resist corrosion.
