Its important to use a pull thru sharpener designed for your knives.The angle on the wheels are designed for the Miyabi knives but can also be used for the Zwilling German knives that are an asian knife profile, such as a nakiri or a santoku.

Miyabi sidekick
Know that the angles of the sharpener match the angle of the Miyabi knives. Other pull thru sharpeners on the market are set at various degrees of angle. It has performed well for me thus far. I'm surprised others have been disappointed.

Very dissapointed
This item worked well for about two times and now doesnt work at all. It seems th eknife is not c9ontacting the sharpening stones, being blocked by the plastic guides. This is an absolute shame as i love my Miyabi knives.

Easy to use
Such a convenient sharpener if you own Miyabi or Asian blades. Super easy to use, just pull your knife through and see the transformation of your knives go from dull to sharp. It’s small and fits easily in a drawer. I’ve bought this for some of my family and friends and they really like how comfortable and confident they can be sharpening their knives at home.

Good for maintaining that great Miyabi edge
A honing tool is the second thing you purchase after a good knife. Maintaining the blade edge ensures maximum enjoyment of your investment. This one is specifically made for Japanese knives that are sharpened to a narrower angle than Western knives. The diamond & ceramic wheels are great for honing and gently sharpening whatever blade you slide through.

You have to hone your knives on a regular basis in order to keep them sharp. If the honing steel is too much work, this pull through sharpener does a great job. The angle is set to Japanese knives, which have a smaller edge angle than German knives. It can perform regular every day edge maintenance as well as sharpening. Nothing beats a sharp knife.

Love the knives but this sharpener is garbage
Received today, Brand new, direct from JA.
I hate leaving negative reviews. I don't want to do it, but please don’t spend your money on this device. It’s very easy to use but produces poor results on their own blades.

Japanese knives have a smaller angle than German knives so you can not use just any knife sharpener on them. This one is made specifically for the angle on your Japanese knives. It's a handy, inexpensive way to maintain those blades for a better cutting experience.

Can we use this sharpener for Miyabi Chef knife? or sharpening steel is better?
This is intended for use with Miyabi knives and will sharpen more effectively than a honing steel. You can also use a stone, if you would prefer. Will the Miyabi 2-stage Sharpener damage my Miyabi Birchwood 9 in anyway? And is this safe to use long-term on my knife (will it take away a lot of the metal over time)? Do I still need to take it to get it professionally sharpened periodically?
This is safe to use on the Birchwood style. The rods are not extremely coarse, so you will not lose too much steel with regular sharpening. We do still recommend having your knives professionally sharpened every 1-2 years or as needed.

Can this be used to sharpen the Bob Kramer by Zwilling knives? I understand that they also are recommended to a 10-12 degree angle.
You can use this sharpener on Miyabi and Kramer knives.

What is the angle that this product will produce on each side of the blade? Would this be appropriate for the Miyabi Birchwood knives? Are there any other Zwilling handheld knife sharpeners that can be used for this series?
This item is appropriate for use with any symmetrical Miyabi knife. It sharpens at a 10-12° angle per side. We only recommend using Miyabi sharpeners with Miyabi and other Japanese-style knives.

Can I use this to sharpen the Miyabi Artisan or Mizu series? Will this do as good a job as sending it back to Henckels to sharpen or do I still need to send it back to sharpen for the perfect finish?
Yes, this item can be used on all symmetrical Miyabi blades. In addition to home maintenance, we recommend having your non-serrated kitchen knives professionally sharpened 1-2 times a year.

I have a gently used Miyabi 600D series knife that has developed several notches in the blade. Is this sharpener appropriate? If so, which side of sharpener should be used?
Yes, this sharpener would be appropriate to use with your knife. You would use both of the stages in order. The first stage will take more steel off the knife to sharpen it, while the second stage will polish and refine the edge.
