Rated 4 out of 5 by from Great knife! Handle might be high maintenance This knife is razor sharp and beautiful. The attention to detail is meticulous. The handle was very comfortable and I appreciated how it is made of real wood. However, I wish it came preseasoned/pretreated to keep out moisture for the initial uses, even if it requires continued upkeep later on. The handle easily absorbs moisture, even if you quickly wipe it dry. So although it is very beautiful wood, even one drop of water will get rid of the original smoothness and sheen of the wood. You have to be really careful to keep it dry and not stain it with whatever you’re cutting.

Perfect for someone like me, smaller hand grip and I liked a lightweight knife but sharp. This knife's blade features a Katana edge, it is scalpel-like sharpness and comfortably in the hand. The Potent core of SG2 micro-carbide powder steel is protected by 100 layers of steel, hand-honed using the traditional 3-step Japanese Honbazuke method. 5000MCD, Cryodur ice-hardened; 63 Rockwell hardness, flower Damascus pattern provides added durability and helps prevent food from sticking. Every Miyabi knife deserves proper care.

Seems like I received a refurbished... handle was a bit stained, it had some scratches on the blade and the pin feels off, not smooth to the touch. Extremely disappointed with the quality control, but if I return it seems like I end up paying for the shipping. Plus customer service dont care and never write back.

I remember trying out dozens of different knives with different styles of blades, handles, weights etc. The winner was this Miyabi Birchwood SG2 8-inch Chef's Knife. Wasn't able to pick up at the time unfortunately but never forgotten. Years later our friends gave this to us as a Christmas gift and we couldn't be happier. Beautiful to look at and hold!! Nice comfortable weight and the sharpest blade ever! Will be our forever knife!

Rated 5 out of 5 by from Amazing and Miles Ahead I tried a Kramer and a few other knives and this one blows them all away. After owning this knife for a little while. I picked up a Shun Fuji which is supposedly their best “SG2” knife and it’s not even close. This one is miles ahead. The handle feels elegant and the shape is perfect! I use my left hand to cut and this feels perfect in my hand! The top of the blade feels smooth...I can use this knife for hours! When I want to finely chop my vegetables and give them that artisan cut I choose this knife. The Miyabi Birchwood allows me to chiffonade lettuce with unmatched precision. I can dice and brunoise onions and other vegetables and they look gorgeous! I make Pico de Gallo look like a work of art with this knife. The blades holds its edge amazingly well it’s super sharp absolutely. It’s a work of art that feels natural in the hand. I picked up a Shun Fuji a week ago and it felt really awkward and the handle felt fake compared to this. This is definitely my go to when I need a precision knife that can make precision cuts

Rated 4 out of 5 by from Good knife but a couple of questions. This is now my go to knife. It keeps an edge well. Easy to sharpen.beautiful handle and stunning blade. But after only three months the logo on one side and specs on the other side are wearing off. If this is normal I don’t like it. Also, this may seem inconsequential but several reviews of this knife commented on the quality of the box holding this knife was of high quality with a finely textured surface, a box worthy of storing the knife but the box my knife arrived in was beaten up and cheap black cardboard. I have a 49 dollar inferior Chinese knife that came in a beautiful wooden box. Why the cheap box? It’s a good knife but why is the logo wearing of and what’s with the cheap box?

I have to admit I was a bit hesitant when I saw the price, but having used this knife for over a year now I can confidently say this is by FAR the best knife I have ever used in my over 20 years of culinary experience. Easy to maintain its out of the box razor blade sharpness with a few passes on a ceramic honing it’s like brand new again. Great for any situation in the kitchen and makes any prep work a breeze with its balance and sharpness.

Is the sharpening angle the same on both sides of the blade?

The handle is very clear and I'm afraid it can be stained easily.Is there a way you recommend to clean the handle effectively? Apart from the sharpening angle,are there other technical specifications that must be communicated to the knife sharpener?Thanks

We recommend washing the handle with a gentle dish soap (like regular Dawn) and non-abrasive sponge or cloth. For comfort, and to help prevent staining and wear, you can condition the wood with mineral or camellia oil as needed. The knife should be sharpened to 9.5-12° per side. There are no other specifications to consider during sharpening.

what is the weight of this chef knife and also in comparison to the weight of the mizu, kaizen and evolution 8 inch chef knives? Also is the d shape hand thats on the birchwood, mizu and kaizen lines aggressively stepped on the right side?

This knife weighs approximately 0.8 lbs. It is heavier than the Kaizen at 0.7 lbs and the Mizu and Evolution 8" chef's knives at 0.6 lbs. The subtle D-shaped handles are very smooth and comfortable to use.

I really want to buy it but I'm concerned I do not have the skills to take care of it. If I buy the Miyabi Birchwood 9" Sharpening Steel... will that be ok for maintaining it on a regular basis if I ship them in once or twice a year for sharpening?
