What is a skimming ladle or spoon?

A skimming ladle differs from a normal ladle in that it is flatter and has holes in the bottom. The reason for this is that, instead of scooping liquids out of the pan, skimmers are used to take cooked food out of water, oil or broth. The holes allow liquid to run off into the pan so that your food isn’t wet and soggy and the head features a slight curve to make it easier to scoop food off the bottom of the pan.

When should I use a skimming ladle?

Skimming spoons aren’t just reserved for professional kitchens, there’s a place for them in every household. They’re an absolute must-have for removing freshly-cooked fries from oil, or if you want to add beef or chicken juices to your pan and keep the meat at bay. Do you like your vegetables blanched? Then you’ll need a skimmer to fish them out of the hot water. Skimmers can even be used for removing pasta from water and letting it drain when you don’t have a pot insert to hand or for stirring when you’re making risotto, for example.
