Rated 5 out of 5 by from Ace Chopping Knife I never enjoyed the task of chopping an onion. Too many tears and it usually turned into a messy pile of unven shapes and sizes. With a little guidance from utube and this incredibly sharp santoku, I've mastered the task. The razor sharp edge slices through an onion or any vegetable with the greatest of ease. The "dimples" help keep food from sticking to the blade. This is a slightly heavy knife, which I love, because the knife does the work for you. Great balance and the handle fits securely in my hand, no slipping.

A must for every kitchen. Last Christmas we gifted this knife to our adult kids for their kitchens and now am now ordering one for my sister. Glad to see it is still available.

The Professional S has all the qualities you look for nwhen purchasing a premium knife...made with specially formulated German steel which is corrosion resistant it goes through Zwillings Sigmaforge and Friodur ice hardening processes. These processes ensure your blade is flexible, chip and crack resistant and stays sharper longer. The hollow pockets along the edge help food from sticking to the blade as you slice.

This is a perfect length for someone who's looking for not so small or not so big on their hand, at the same time you'll have perfect control for the knife. Comfortable and balanced size, will quickly become the go-to knife for everyday tasks. It's the most easiest to sharpen, it has a unique blade shape and ergonomic bolster. Whether chopping, slicing, or dicing, the broad blade are comfortable in the hand. This can is a vegetable knife, large fruit knife, and a meat knife as well.

Rated 5 out of 5 by from Excellent all purpose knife 7-inch santokus are workhorses. I use it almost exclusively. Great for chopping vegetables and meats. And this line, the Professional S, is terrific line of knives. They feature a traditional straight bolster and a slightly smaller handle. As a result they are a little lighter than the new Pro line. I have owned one of these knives for years (more than 10). It has performed year in and year out, and I cook a lot. I sharpen it maybe twice a looks almost new.

Rated 5 out of 5 by from I have had santokus before and enjoyed the way that they cut and chopped food. The flat blade makes cutting large piles easy and consistent. I really like this one in particular because of the weight, it is heavy enough that i don't feel like I'm doing most of the work. I can chop stalkier foods, that would normally require a little more pressure, with the same effort that I can cut softer items. all in all worth the money.

Rated 5 out of 5 by from Great all around knife I was looking into purchasing a chef's knife, but I cam across santoku knives and decided to go with this one instead. I think I made the right choice because I love how wide the blade is so that it is easy to move food from the cutting board to the pan with the wide blade and the ovals on the sides make it so that the food doesn't get stuck to the blade. I also love that the handle is super comfortable.

"We sharpen most of our knives to 15 degrees, but our santoku knives are sharpened to 10 degrees. I have a TWINSHARP Duo Stainless Steel Handheld Knife Sharpener. Can I sharpen my Santoku on this along with my other knives?

No, the sharpening mechanisms in our Zwilling/Twin sharpeners are not angled appropriately to sharpen Santoku and other Japanese-style knives. Those knives are best sharpened with stones or steels.

What is the difference between the Pro 7" Santoku and the Pro "S" 7" Santoku? Thank you.

The Professional "S" line has a full bolster between the blade and the handle, and a thicker handle than does the Pro line, which features half-bolsters between the blade and the handle. Both lines have forged blades, made using the same high-quality German steel.

I do a lot of cooking, have many knives.My favorite is Henkels Professional S, 31120-180 (7"). I hand wash and care for it but through long use two large pieces of handle have broken away from the knife. If I send to Henckels will H repair it? What cost?

Can this knife be sharpened on my Chef'sChoice model 130 sharpener as an american 20 degree blade?

We sharpen most of our knives to 15 degrees, but our santoku knives are sharpened to 10 degrees. We recommend maintaining those angles when sharpening.
