Description

ZWILLING Pro is the most user-friendly knife available to market. The unique blade shape and ergonomic bolster are the result of 280 years of experience in knife making, and the rigorous study of how knives are used. A unique curved bolster supports the professional pinch grip, with thumb and index finger on the blade, for safe cutting and less fatigue. The blade was redesigned with a broader curve in the front to facilitate the rocking motion of Western cutting, while the straight back is ideal for the Asian chopping motion. The full length of the blade can be used when cutting and can be sharpened from bolster to tip Designed in Italy by Matteo Thun and made in Germany by ZWILLING J.A. Henckels, the company that sets the standard for exceptional cutlery worldwide. With ZWILLING Pro we introduced an optimized chef's knife blade shape. Through years of experience in professional kitchens, some chefs have grown accustomed to and therefore prefer the traditional blade shape of the chef's knife. Rated 5 out of 5 by from Makes me actually look forward to prep Two words: CURVED BOLSTER. It's a game changer. I occasionally do around 3 hours of prep work when making kimchi and used to get a huge blister at the base of my index finger because of my pinch grip. This knife however is so comfortable to use. It's hefty enough that I feel like I have control without it feeling heavy at all. Out of box sharpness is fantastic and passes the printer paper slice test. Easily slices thick root vegetables and is precise enough to make grapefruit suprèmes. Even with the German steel and amazing build quality, would recommend getting a ceramic or steel honing rod with angle guides to use before each use for good knife maintenance.

Rated 5 out of 5 by from I am using this knife now replacing my pro chef that has the deeper curve on the blade. My daughter borrowed my usual chef knife so I decided to try this one. I really like how it moves on the cutting board! I have always loved the Zwilling Pro series with the gently curved bolster and the balanced handle but this traditional chef is a nice step up for my cutting skills, its a smoother movement than I was used to but is just as efficient if not more so. Best knives on the planet!

Rated 5 out of 5 by from The Great Wide Blade! This Pro 6" wide blade function almost like nakiri knife. It has the same feature and purpose except this chef knife is not rectangular shape though slightly narrower blade towards the tip. Both knife has curved bolster encourages cutting with improved precision, safety and comfort. Upon cutting food, blade is useful in scooping from the cutting board. Great for cutting meat, vegetables, fruits and even bread. This knife is forged from a single piece of Special Formula High-Carbon NO STAIN stainless steel, durable, Ice-hardened FRIODUR blade and resilient.

Rated 5 out of 5 by from Of all the wide knives, I think 6-inch wide blades make the most sense for me. I am cook and I do like to start everything from scratch. I prefer to break down my meats and poultry, clean my own fish and chop my own vegetables. This wide 6-inch helps with all of these things. It is much more maneuverable than a cleaver and heavier than a nakiri. Two features I really like. This one is a particularly good one. It is a Pro knife, so it has quality baked - or should I say - forged right in. Brilliant angled bolster for comfort and control.

Rated 3 out of 5 by from Build Quality Issue I ordered online and received my order quickly but there is a problem. The handle scales are not flush with the tang. You can feel the metal edge of the tang in your palm resulting in uncomfortable handling. The handle and tang should be perfectly flush. Where is the quality control? I am considering returning the item.

Longer and wider than a prep knife this can still do the small work such as mincing and dicing but can also take on bigger items like acorn squash, leeks and onions. The Pro knives are made to last a life time, feel great in the hand and the curved bolster makes using a correct pinch grip effortless.

Rated 5 out of 5 by from comfortable classic I really liked the bolster improvement in the Zwilling Pro line but prefer a traditional tapered blade. This meets those requirements. The blade is made from German forged high carbon steel. It stays sharp for a very long time and is easy to maintain. I was drawn to this line because of the curved bolster. It makes the knife more comfortable to hold and encourages the proper holding of the knife. I get straighter more accurate cuts and less fatigue during long periods of use.

What is the factory recommended cutting edge angle for this model? I noticed other knives in this series are set at 15 degrees. Would sharpness last longer if set at 20 degrees?

This knife has a blade angle of 15° on each side (for a total blade angle of 30°). The angle doesn't determine how long sharpness will last. You will have to maintain the edge (at 12°-15°) to keep the blade sharp.

Can you tell us about the steel? what is the hardness, what are the different materials that make up the steel?

The formulation and treatment of our ZWILLING Special Formula Steel is proprietary, it is a specific blend and is heat treated in a very specific manner. The Rockwell hardness of all of our knives that use this steel (Pro, Professional "S", TWIN Signature, Four Star, Four Star II) is 57 HRC.
