Rated 5 out of 5 by from This is a very good knife. I've been using this knife for several months now and like it very much. I have several Japanese high quality knives and this knife (somewhat surprisingly, perhaps) shares a number of features with those knives. The steel is not quite as hard, but the edge geometry allows a very sharp edge to be formed and maintained. with nothing more than a few stokes on a hard, black ceramic honing rod. Also, the knife fits nicely in the hand and has a very good bolster design. I am pleased (and a little surprised) that Zwilling has put this excellent knife together for such a reasonable price. Well Done!

Rated 5 out of 5 by from ROCKING SATOKU REALLY ROCKS!!! My husband and I were seriously overdue for some quality “adult” knives for our home. You know, the purchase you plan for as an investment - not the quick fix thing you know won’t last. I am no chef by any means but I love to cook and my family loves to enjoy food. The set of knives we purchased are amazing, yes they’re sharp, but that’s obvious since they’re new. These knives, we got the Pro series, feel amazing when you’re working with them it’s almost effortless, we are thrilled that we no longer have to “fight to cook”. The Asian knives were a great addition to the western knives and I’m excited to try so many new recipes and techniques. Highly recommend

I gave him a set of Henckels about 20 years ago, and they still cut like a charm. He doesn’t get this until Christmas morning, but no doubt he will love it. We all have Henckel knives. Thank you

Rated 5 out of 5 by from Best Knife we have ever owned! Hubby and I received this knife as a Christmas gift. We do a lot of cooking and have a collection of knives, but none of them are as good as this one. I can use it for almost any task and it is amazing. Only bummer is our cracked - not sure why as we do no put in dishwasher nor was it dropped or mis-used. Sending it back and hoping it is a defect because I would love to get it replaced. Gave 4 stars on quality because of this crack issue - have not had that happen with any other knife we have owned.

Rated 5 out of 5 by from When I was introduced to the Rocking Santoku, I was skeptical; on the contrary, this mash up of a standard Chef knife and Asian Chef knife (standard Santoku) has become my go to knife. ZWILLING has certainly outdone themselves with this knife’s creation... the versatility is amazing! Give it a try, you’ll be as convinced and amazed as I became. Plus, it was only $49.99!

Rated 5 out of 5 by from Great knife for a home chef! I like the ability to cut food with either the chop motion, or the rocking. I prefer to chop, but my roommate is more used to the rocking cut, so it works great for both of us. The knofe cuts well, is easy to maintain, and sharpen with the Zwilling sharpener. My only complaint is that I cannot get a sheath from Zwilling to store it in.

Can you tell me the hardness of the blade and what degree is the blade supposed to be sharpened to? I would like to sharpen mine and I'm not sure if I use a steel or ceramic honing tool?

The blade is 55-58 HRC and sharpened to 10-12° per side. You may hone the blade with a steel, but we also recommend sharpening with a stone or handheld sharpener as needed for more effective results.

I see there are two 7" santoku knives. One is listed with a hollow grind and the other a fine edge. I was curious about the differences between the two.

As long as they are from the same style, the knives will be materially identical, and you can expect the same sharpness, edge retention, and performance. However, knives with hollow edges will help prevent food getting stuck to the blade during chopping. This feature is ideal if you're prepping lots of fresh vegetables or more delicate proteins, like fish.
