The premium cutlery pioneer ZWILLING J.A. Henckels has been crafting notable knives since 1731. Respected as an innovator in the industry, the company remains true to its roots: a strong commitment to quality and excellence. ZWILLING Gourmet is the go-to knife for home chefs eager for their everyday knife to be exceptional. ZWILLING Gourmet 6.5-inch Nakiri Knife is rated 4.7 out of 5 by 136.
Rated 4 out of 5 by from Regarding person who thought this "hurt her hand" - I have a Shun nakiri, this one, and a Chinese carbon steel one from my mother. I thought the rounded Shun handle would be more comfortable, but the Zwilling handle is actually more to my liking. Also, the Shun has more "heft" but I like the Zwilling better. Finally, both the Shun and Zwilling (and many knives today, I've noted) are sharp on the back of the blade, so if you switch to style of cutting where you grab the blade itself, it does get uncomfortable. I've taken a fine sanding disk to both sides of the top back edge of the blade and that's solved it. And what a deal!

Rated 5 out of 5 by from Nice alternative to my chef's knife I've have the nakiri for a couple of days now. I own the twin gourmet 8" chef's knife, and a Victorinox 8-inch chef's knife too. This knife is crazy Sharp. It's life's the block of pecorino Romano cheese fairly easily. I used it on an assortment of vegetables. I really like the knife. I also like how the blade has a lot of areas so I can scoop up what I just chopped easily, sort of like using a dough scraper. Like I said, I've only had the knife a few days. I don't find it uncomfortable to use. I generally use the pinch grip. And have had no issues thus far.

Rated 1 out of 5 by from Hurts hand I have some of the Henkel(cheaper version on zwilling) knives and one zwilling. My cheaper knives hurt my hand bc the handles aren’t polished very well. The metal cuts me. Anyway, I bought this one thinking I was getting a great deal. A superior knife for the cheaper price. Unfortunately, it’s the same handle as my cheaper knives and the handle immediately cut into my handle.

Rated 5 out of 5 by from Gotta give it 5 stars! Great chopping knife, but it is not limited to just vegetables and fruits. It will take on most (all?) cubing, dicing, slicing, mincing jobs in a kitchen. Excellent weight and balance. Worth every penny. The Gourmet line is a very good line of stamped knives. They are manufactured under tight controls and precise standards at Zwilling’s factory in Solingen, Germany. They have a full tang, running from the tip to the heel of the handle making these knives sturdy and stable. The comfortable handle is solid without being heavy. Because the composition of the steel, these knives will stay sharp and responsive with every cut. Keep the blades honed, sharpen once or twice a year and you will enjoy them each time you use them. Dishwasher safe, but hand wash to keep it looking new.

Rated 5 out of 5 by from Great knife, I use it every day for everything I never used a nakiri before this. I like the slight curve in the beginning as I am used to rocking the knife a lot back and forth. My friends and family are always impressed when they also pick up the knife (usually to cut something casually) and are always pleasantly surprised by the comfort and weight of the handle. I can use it for delicate things like peeling fruit and cutting through thicker pieces of meat with ease and no worries of hurting myself b/c of an unsharp knife.

Rated 5 out of 5 by from Effortless! I needed a back up to my 40 year old Caddie 6” knife decided to try Zwilling J.A. Henckels 6” knife. I received my knife yesterday and used it for the first time this morning. It feels good to hold, balanced weight, sturdy and cutting performance effortless. As vegans, our meal preparations consist of a lot of cutting and chopping having the right tool shortens my prep time and effort. As a first time user of a Zwilling J.A. Henckels knife my expectations, so far, have been met!

Rated 4 out of 5 by from Bought this knife via Chris Kimball's Facebook page. I bought 2 - 1 as a gift and 1 for myself. It is balanced and works very well on all types of foods, small and large, thin skinned and thick. BUT the blade on the one I opened is scratched and scuffed along the cutting edge. I hope the other one I'm giving as a gift is in perfect condition. Tried to take photos but they didn't turn out very well. Not sure if I'll recommend this knife.

I LOVE this knife - and I am a chef knife addict....Just wanted to see which is best - use the Asian or Euro/American slot when sharpening with ChefsChoice 4643

Asked by: Reggie
While we're not sure about the angles for that particular sharpener, this blade should be sharpened to 15° per side.
