Only knife for large cuts of meatThis used to be called banquet knife. It is the knife that the chef's stand at the end of the buffet line and gracefully carve a thin (or thick) slice of prime rib with. If you do roasts, briskets, whole sirloins, turkey, goose then you need one of these in the drawer.
Years ago I broke down and got one for the holidays. I am so glad I did. Every time I make large hunk of meat, I pull this knife out and slice with confidence. Great gift for a cook or meat eater.

Perfect SlicerWhether you're slicing a cake, through a huge roast or turkey or slicing salmon, this 10" knife performs perfectly with ease. It is a clean slice every time and with the hollow edge, aka dimples, food doesn't stick to the blade.

classic slicing knifeSo many slicers today are not long enough and the blade is too thick. This is the perfect example of a professional classic slicer. The comfort grip handle is made for long use. The blade is very thin and sharp making it ideal for roasts, hams, smoked fish or any other meats that you want to slice very thin. The forged German steel and construction is of the highest quality and will last a lifetime.

A great alternative slicer knifeAn unique slicing knife with it being hollow edge, it’s the optimal knife for slicing meat; whether slicing a pot roast to getting that thin deli slice, this knife does a great job of releasing the food right of the blade thanks to the indentions on the blade. A great knife for slicing anything, it’s durable forged stainless steel construction makes this a sharp and long lasting knife.

This carving knife slices though any meat like butter. It is made from German Special Formula Steel, also forged from one piece of steel so durable for a lifetime. The knife has hollow edges to help move meat away from the blade while slicing. The handle is comfortable and lightweight, a nice option compared to other heavy handle knives.

Toss that electric knife and slice your roasts like the pros do. This slicing knife will glide through your turkey, fajita steak, ham roast, etc.. with ease. The hollow pockets on the edge help keep the meat from sticking to the knife as you go. Four Star knives have comfortable light weight handles with a sturdy forged bolster.

Great Roast Beef SlicerThis is the perfect knife to slice paper thin roast beef and ham. Nice long blade glides through really large cuts in one nice swift movement. The granton edge prevents meat from sticking to the the blade by protecting against air pockets. Now I know why I always see these at carving stations in restaurants and hotels.
How to sharpen? Is this considered a serrated blade or can it be sharpen like other knives?

What is the total length of the 10" slicing knife. I'm needing a 16-1/2" total length one. I have already purchased over $1,000 of your cutlery for my grandson who is about to graduate culinary school in Houston. He must have the best. THANKS!

My father has the 31081-260. Whats the difference between that one and the 31081-263? I like his and was looking for one similar since I can't find the 260.

These are actually the same knife. The last digit in the number refers to the packaging (in this case a "3" for a retail box). The number on the knife, regardless of the packaging it comes in, will always end in "0." 31081-260 and 31081-263 are the same item.

what's the difference between #31081-263 and #30081-263?

Both knives are very similar, both are 10" slicers with a hollow (granton) edge.
The 31081-263 is from the Four Star series and the 30081-263 is from the Four Star II series. The blades themselves are the same, but the handles are slightly different. Both are molded polypropylene that is permanently bonded to the blade, however the Four Star II has an added stainless steel end cap. The end cap adds balance. weight, and style.
