Very smooth texture- does not have deep grooves
I trust Zwilling and have enjoyed using your Professional S knives ....I wore out the original one and a Henckels second one
This one appears to be very smooth without the texture of the prior sharpening steels
Over time, I may change my opinion....but for now feel it’s middle of road and not to the level of my Professional S 7 inch Chefs knife

Good length, good handle
This steel is used in many professional kitchens. It is hefty - weighty with a slightly larger handle for bigger hands. The weight helps with stability. I like the length. I can get the full length of the blade covered in one stroke for most of my knives. Very durable. Will hold up to heavy daily use, so will last a long time in a home kitchen. Ring at the end of the handle is for hanging it in a convenient place, since you'll want to use it everyday.

Every kitchen needs this
This is a really nice honing steel I use this one for all my Zwilling knives and I'm always amazed at how sharp they stay. This does not replace your annual sharpening but keeping your fine edges in alignment ensures they give you the best daily performance. If you're uncertain about how to properly use this just look at a video on line and you'll be easily doing it in no time!

Great tool to hone your knives
Great and easy way to keep your knives sharp longer. With the honing steel, you can keep the edge on your knives for much longer, and you won’t have to worry about sharpening your knives as much. Perfect for any German stainless steel knife. Nice handle on the steel as well, provides easy and sercure comfort as you use the steel to hone your knives.

Keep Your Knives Sharp!
The honing steel will realign your knife edge bringing it back to that "out of the box" sharpness. You should use this any time your knife isn't cutting the way you want it to, although some use it every time they cut. The beauty of a honing steel is that you can't do it too much; it doesn't take metal off of your knife. It's simple to do but a video on the website really helps. This 12" steel can handle up to a 10" knife.
Remember, dull knives are more dangerous than sharp ones.

If you want your knives to stay sharp, you need to use a honing steel as often as possible. I keep mine out whenever I cut, and will run my knife up and down the steel every time it seems to dull.
This is a fabulous honing steel. Nice 10" length, easily handles long or short sized blades. The handle is extremely comfortable and durable, fits my small hand as well as my husband's larger sized hands. One of the most important tools I own.

This 12-inch steel will handle any length knife in one smooth stroke. The heftier handle is designed for folks accustomed to the weight. The ridges on the handle are a help when hands are wet. The loop at the end is there to hang the steel from the prep table or on the wall. Made in Germany of quality durable steel. Will last, even with heavy daily use.

Quality Product
This is a quality sharpening steel. I had an older, cheaply made one from years ago that was rusty and so I purchased this looking for a good sharpening steel for my new Zwilling Pro Chef knife. The first thing I noticed was the weight. This is much heavier than my previous sharpening steel. It does the job and I know this product will last!

Is this recommended for use with the Miyabi Koh chef knife and Zwilling Twin Signature 5.5 inch prep knife? If not what product is best for routine (daily/weekly) edge maintenance for each of those knives?
For the Twin Signature Yes, however the Miyabi Koh has a 61 Rockwell hardness. This would call for a matching Honing Steel.
