Rated 5 out of 5 by from Take sharpening to the next level Keeping your knives sharp is essential and having sharp knives makes cooking so much more enjoyable. Most sets come with a steel that is designed to realign the blade which brings it back to a point and gives you a sharp knife again. It doesn't take metal off of your knife. If your knives are a little older and the steel isn't working anymore, the diamond steel may be your answer. With the same technque (see video on website) the diamond steel can reshape your blade. It has flatter sides so it's much easier to maintain the correct angle, plus the diamond surface can remove some metal from your knife making it sharp again.

I always struggled with sharpening my shears so this tool is absolutely a blessing. The scissor sharpener sharpens the two blades simultaneously! I love this tool because it is so easy to use, just pull it through! The non-slip bottom makes for safe sharpening in addition to the comfortable and protective handle. This tool makes sharpening all western-style blades a breeze. It is small which is convenient for storage; it fits in my drawers perfectly! Absolutely a must-have item for maintaining your blades. A sharp edge really enhances the cooking experience.

Rated 5 out of 5 by from Take Honing to the Next Level A honing steel will help you maintain the edge of your knife by realigning the blade. You should do this whenever the knife doesn't feel as sharp as you'd like it to be. However, eventually you won't be able to get your knives as sharp with the honing steel. The diamond steel takes honing to the next level because it's a much harder, rougher surface. Instead of just realigning the blade, you are actually taking metal off and making it much sharper. This 12" steel is a perfect length, handling sharpening any knife up to 10".

Super easy to use, just pull your knife through and see the transformation of your knives go from dull to sharp. It’s small and fits easily in a drawer. This is a really awesome sharpener in comparison to the others because it has a specific sharpening component for shears! Most of the time if you need to sharpen your shears you have to take them to a professional because most sharpeners pull through or electric don’t have the capability to sharpen shears. This is the perfect sharpener if you want to sharpen your German knives and shears with ease and confidence.

With this honing steel, you can keep the edge on your knives for much longer, and you won’t have to worry about sharpening your knives as much. Perfect for any German stainless steel knife. Nice handle on the steel as well, provides an easy and secure comfort as you use the steel to hone your knives. Also since it’s a diamond shape steel, you can hone your knife with fewer strokes than a traditional round steel.

I hunted for this item at many retailers in my country locally (Home Depot, Lowes, Bed, Bath, and Beyond, etc., etc., etc.) The only items available were standard knife sharpeners. I had a pressing need for a scissor sharpener and I finally located this item at a small kitchen store in Peddlers' Village. Today, I sharpened over thirty pairs of scissors and my kitchen knives. I also rehabilitated a poorly maintained Henckels knife and honed it back to a smooth, sharp cutting edge. For the price of this item, I not only saved the cost of new scissors and knives, but also reduced the dangers of prepping with dull knives. Saves money and fingers and I hope to get many years out of this sharpener.

Rated 5 out of 5 by from Amazing I have used other knife sharpeners similar to this one. But they do not compare with the ability of this one to sharpen knives. Plus you can sharpen your scissors. I am so glad I saw this on your website and bought this sharpener. I have had my knives for close to 20 years now and my scissors were dull I had no idea I could get a sharpener for my knives and for my scissors. I would highly recommend this to anyone It is well worth the money and I know it will last me for years just like your knives have. Keep putting out the wonderful products that you do.

Rated 5 out of 5 by from With normal use the straight edge on your knives will bend out of alignment. This is not a dulling of the edge but rather just microscopic bending of the sharp edge. Regular honing keeps your knives in alignment keeping them sharper and able to perform their best. Normal honing steels align your straight edged knives between sharpening but this diamond sharpening steel will actually keep your edges even better with less effort.

When do you use the “course” side and when do you use the “fine” side?  How many times do you pull the knife through? I am assuming you should not use this on a santuko knife?

Depending on the dullness of the blade very dull use the coarse side then the fine side, not so dull use the fine side. I few firm yet gentle strokes . Not for Asian Blades For Asian Blades use our ZWILLING KNIFE SHARPENER #32602-001

What grit are these diamond steels?

Our sharpening steels use fine lines to hone your blade, but they do not have a grit rating. They do have an HRC or Rockwell number: most steels come in an HRC between 60 and 65, which is harder than a Western blade with an average HRC of 57.
