Great length and serrationsNow this is a bread knife. A beautiful one to be sure, but it is also a smart one. It is a smooth 9.5 inches. Long enough to tackle any big boule that a great artisan bread maker decides to produce. The Damascus-style layered steel is finished with an elegant scalloped edge that bites the crust and glides through the crumb with equal precision. Perfect.
Adding to the enjoyment of this phenomenal cutting tool is its beauty. The Damascus-style polishing showing the layers and the linen Micarta handle with finishing details combine to make using and owning this knife a joy. Hand wash. This knife will be sharp and beautiful for a lifetime.

Bread knife so sharp!One great bread knife, 9.5" Miyabi Kaizen, for years I've enjoyed fit and finish.
It is not by surprised that this knife is versatile, great for leafy vegetables and cuts through meats breads, bagel and baguette effortless.
This is a VG10 super steel Japanese knife,a golden standard. It is scalpel-like sharpness and has 65-layer Damascus flower design. This exquisite, hand-hammered effect helps prevent food from sticking. Hand-honed blade finished with a true katana edge and a CRYODUR blade, ice-hardened to Rockwell 60. The blade is balanced by a refined D-shaped handle made of black linen Micarta. Hand wash is recommended.

The Kaizen 9.5" bread knife is not the typical bread knife I grew up with. Made in Seki Japan, the VG10 steel is protected by 64 layers of softer steels, creating a beautiful floral pattern adding to the authentic design. The D shaped handle, also a Japanese feature, fits well in my average sized hand, and is extremely comfortable. The longer serrations make cutting through even the hardest, crustiest bread, extremely easy. Works great, looks great, couldn't ask for more.

Amazing serrationThe serrated edge on this knife is so amazing. The longer teeth puncture the crust and then it's so sharp you don't squish the soft middle at all as you continue through. Kaizen knives are made from VG10 super steel and harden to an impressive 60 on the hardness scale. It has a beautiful damascus pattern and an elegant linen Micarta handle that looks like wood with non of the maintenance downfalls of wood like swelling or cracking.

Great bread knifeI love the design of this knife. The D shaped handle is very comfortable to hold and very light. The Damascus style blade is very sharp and cuts through even the crustiest breads with ease. Its great for tomatoes, citrus, and anything with a tougher outside and a softer inside. The VG10 steel is extremely sharp and stays that way for a long time. The artistry and craftsmanship is evident throughout every inch of this knife.

Why get a plain Jane knife when you can get an authentic Japanese, Damascus bread knife.
The 65 layer design with the beautiful Katana edge, true to its heritage, will slice cleanly through a loaf of homemade bread without smashing it. It's made from a super hard, VG10 steel so it will hold its edge really well. I love the handle; it has the look and feel of wood but is durable like synthetic materials.

This is one beautiful bread knife and oh so functional. The blade has a core of VG10 super steel and is protected by 64 layers of additional steel. It is also ice hardened so the knife stays sharper for a longer period of time. The knife glides through even the toughest bread edge with out damaging it. I also love to use it to take apart melons or anything with a hard exterior and soft interior.

A great bread knifeI love the look of the blade and the flower Damascus pattern look of the 64 layers of the VG10 steel on this bread knife. The handle is nicely rounded, really feels nice with the Micarta wood handle. It has a really nice weight to it, and I can slice through anything with ease and smoothness; whether it’s a loaf of bread to fruit or meat, the bread knife provides great and clean slices every time.
