The D shaped handle, with the signature Miyabi logo on the end cap, rests comfortably in the palm of your hand. It's made out of a very durable material called micarta; which is a linen and resin mixture. It's awesome because you get the look and feel of wood with the durable of a synthetic material. The blade is a 65 layer damacus that protects the VG10 core. This makes it very hard which gives it incredible edge retention, plus durability. If you want an authentic Japanese knife, end your search with Miyabi. They are made and sold in Japan as the premium knife.

What I love the most with these Miyabi Kaizen set, it has everything a Chef would ask for to have in their kitchen for every cooking needs. It is sharp and functionality is awesome..!!! I'd use this every day and never needed a lot of sharpening because it stays sharp as long that you honed it once in a while. Don't forget A VG10 super steel Japanese knife, it is sharp and has 65-layer Damascus flower design. This exquisite, hand-hammered effect helps prevent food from sticking. Hand-honed blade finished with a true katana edge.katana edge and a CRYODUR blade, ice-hardened to Rockwell 60. The blade is balanced by a refined D-shaped handle made of black linen Micarta.

Rated 5 out of 5 by from I love the knives that are included in this set, as they are not the typical knives to be included, but they are the most used knives in the kitchen, which makes this set a super value. You will find that these knives are very sharp due to the VG10 super steel that is used and the special ice-hardening process that makes them durable as well as sharp. The traditional D-shape of the handle makes this knife very comfortable in your hand and the linen micarta construction of the handle makes it moisture resistant as well. An out of this world set that will last for years to come.

This set of Miyabi Kaizen knives has each blade profile you need in your busy kitchen and the will stay sharp and look beautiful for lifetime(s) of enjoyment. the VG10 "super steel" core is made to stay sharper longer and then with 64 additional layers of steel to create a gorgeous damascus design you'll marvel each time you pull one out of the block. With an authentic thin Japanese blade and an edge between 9.5 and 12 degrees you will notice the difference!

Rated 5 out of 5 by from They were serious when this was named Kaizen or "change for the better!" This is a huge step up and obvious improvement from any other knife block set you may have had! This set will last a lifetime and then can be passed on. A few extra slots for adding in a couple of other knives you own or buy. The handles are smooth and feel great with super control, while the design is the Damascus flower and so beautiful. Sharp, stays sharp and has good balance for great cutting.

Rated 5 out of 5 by from Love this set! I absolutely love this knife collection. I love the look of the blade and the pattern look of the 64 layers of steel of this knife. The handle is nicely rounded, really feels nice with the Micarta wood handle. It has a really nice weight to it, and I can cut with ease and comfort. I have had a lot of different style knives that I used in the kitchen, but this is one collection that I always go back to, I just love everything about it so the block set is perfect.

Rated 5 out of 5 by from The best of the best Kaizen knives are some of the best. They are world class knives, owned and enjoyed by professionals and home cooks alike. This set has a great selection of knives - enough that you will want for nothing. (Well maybe one or two more.) It features great everyday knives - the 8 and 6-inch chef's, 5-inch santoku - so that more than one person can work with a great knife in the kitchen. It also has all the best specialty knives - a great bread knife, a superb slicing knife, and smaller knives for peeling, coring and garnishing. Adding to the enjoyment of this phenomenal cutting tool is its beauty. The Damascus-style polishing showing the layers and the linen Micarta handle with finishing details combine to make using and owning this knife a joy. Hone regularly. Hand wash. This knife will be sharp and beautiful for a lifetime.

Rated 5 out of 5 by from great knives This is a great set. The Kaizen knives have a cool Damascus pattern on the blade. The layering of the high carbon steel really makes a great blade. It stays sharp for a very long time and is very easy to maintain. The handle design and insignia add an artistry to the look and are very comfortable to hold. The bamboo block compliments them well and I love how there are extra slots to add more knives.

Do these have a full length tang?

Our Kaizen series does not have a full tang. The length of the tang is specifically designed to offer optimal balance.

Are the Miyabi Kaizen knives single bevel traditional Japanese grind, or double bevel Western grind?

The Kaizen knives are double bezel. Very, very few of our knives are single, bezel. Any that are will be clearly marked.
