This 9.5" MIyabi Evolution is handcrafted in Japan, fabricated from revolutionary FC61 fine carbide steel, Ice-hardened FRIODURx2 blade offers exceptional durability, cutting edge retention, and corrosion resistance. Depending of the food size, this length is perfect for slicing and carving roasts meat, vegetables and fruits. It a go-to knife for daily cutting needs, it is scalpel-like sharpness, precision and the elegance of artistic cutting. Time-tested German engineering meets Japanese craftsmanship. Damascus smokey look on the blade prevents food from sticking to the knife, comfortable handle and durable.

Rated 5 out of 5 by from The perfect slicing knife. I bought a knife like this for my daughter and son-in-law for their wedding day to slice the cake. I wanted something very special that would slice far into the large wedding cake, look amazing in photos and be a keepsake. I had it engraved, with their first names and the wedding date. I strongly recommend this for anyone thinking of getting a knife for wedding cake slicing. Now they have a fabulous knife to use for many years of roasts, turkeys, hams, etc! I bought them one of our magnetic knife bars and they display it proudly and it is within easy reach for whenever needed.

Rated 5 out of 5 by from A great slicer knife This is a great Japanese slicer. I really like the feel of the handle on this blade, it’s very comfortable and contours nicely. The blade has a nice lighter weight to it, but is very sharp. This is a great knife collection if you want to go from Western style knives to Asian. With the Evolution, it brings the two styles together with the ice hardening of the FC61 steel, making it a much more durable Japanese knife. This is a really great slicer knife set that slices meat, fish and veggies with ease.

Rated 5 out of 5 by from Often times a slicing knife is called in for a special occasion so why not invest in a special slicing knife to compliment the mood. This is a gorgeous Miyabi Evolution knife is super sharp made from FC61 steel that is so hard it will retain the sharp edge use after use and resist chips and cracks. The blade is mirror polished and the handle has a comfortable western styled feel. This knife will provide you with the thinnest slices of roast or the biggest slices of birthday cake!

Rated 5 out of 5 by from Evolution has always been my favorite line of knives from Miyabi. Very approachable, easy to care for and familiar in the hand. Made from superior FC61 stainless steel these knives are more chip and corrosion resistant than most Asian steels and will hold their acute edge angle longer as well. The POM handle is smooth and feels secure even when wet. This slicing knife goes through a turkey breast, roast or sausage in one stroke. Great addition to any knife collection.

Rated 5 out of 5 by from Slicing Machine This Japanese knife is so incredibly sharp it can slice turkey as thin as paper. The thin blade with a very small edge is what gives it the amazing sharpness. But it's also made from a super durable steel called FC61. It is very chip resistant which can be a problem with typical Japanese knives. The handle is more like my German knives with the curves and three rivets, which I love. it's comfortable and durable.

Rated 5 out of 5 by from Miyabi knives are superb!! Each collection is a bit different, but all are superbly sharp, durable, with a thin blade, and no rust or chipping, due to the Friodur process. I love the mirrored finish on the Evolution knives. You can see and feel they are crafted by artisans who are passionate about what they do! 42 days to create 1 knife! That says a LOT.

Rated 4 out of 5 by from Beautiful slicer! Its made from FC61 fine carbide steel and ice-hardened twice which translates to exceptional durability, cutting edge retention, and corrosion resistance. The blade is dry sharpened creating a scalpel-like sharpness. This slicer will get through and meat, fruit, vegetable you can think of.
