Crafted from superior quality fine carbide steel that is often used in razor blades, the knives offer the signature sharpness for which Japanese knives are known. A sophisticated six-step ice hardening technique unlocks the steel’s full potential guaranteeing these FRIODURx2® blades boast remarkable initial sharpness, cutting edge retention, corrosion resistance, and chip-resistant toughness.
Beautifully polished to a mirror finish, the blades have a katana edge reminiscent of the samurai swords forged in the same town centuries ago. Curved for comfort and thicker at the end to prevent slipping, the triple-rivet handles encourage fatigue-free cutting. Feels good in the handHandy tool for taking on the smaller tasks. The handle on this knife is comfortable in most people's hands making it a much used kitchen tool.
The Evolution line is the kind of knives that inspire loyalty and cooking creativity. It is a hybrid of Japanese and German knife making traditions. The handle is a perfect example. It is a little heavier like a German knife, but a little narrower like a Japanese knife. The steel that the blade is made of is German and the craftsmanship is Japanese. The combination is a hard durable blade that stays sharp for a long time. Hone it regularly and sharpen maybe once a year; you'll have it forever.
Evolution knives are dishwasher safe, but hand wash to retain the beauty and look of new.

Recently purchased the Miyabi Evolution paring knife, and I am so pleased with it. The FC61 steel is hard and holds an edge, but is not as brittle as some of the other Japanese knives I've owned. A real work horse, easily peels potatoes, apples, and root vegetables.
Love the traditional German style handle, which I prefer over the Japanese style.
Really feels great and gives me greater control. The knife has a thin blade, and a 12.5 angle on each side, which makes it extremely sharp. This knife does everything it promises.

Amazingly sharpAfter buying my 6" Miyabi chef's knife I knew that I needed another smaller knife. My 3.5" Miyabi let's me breeze through all my prep work. These 2 knives are the sharpest ones that I have ever owned.

One of the most used knives in my kitchenThis is my second Miyabi 3.5 in paring knife I’ve owned…..the first came as part of a 10-piece set, but the paring knife disappeared. Since this, along with my Miyabi 8 in Chef’s knife are my “go to” knives, I had to replace it! The handles are beautiful, they balance nicely in the hand and are comfortable to hold. The blades slice through food with ease. There is considerable savings when you purchase one of the larger sets, so if you can, I highly recommend doing that.

Perfect ParerI had been looking for a nice paring knife for a while and was intrigued enough by this offering from Miyabi to give it a shot. While I haven’t owned the knife long enough to really put it through it’s paces, so far it’s been brilliant. Comfortable to hold, we’ll balanced, and incredibly sharp. The edge also seems to hold up well with regular steeling, so I have high expectations of things to come. Overall, very satisfied with the purchase!

I didn’t know what a knife could do beforeThe sharpness and his lightweight is what I can’t get over. Too tied quality is what this knife screams. All I want to do is test my pairing knife on different foods. I felt like I was in the prison scene of Goodfellas with how thin I could cut garlic. I couldn’t be more proud to own my pairing knife and it makes me want to cook dinner every night instead of ordering in. I can’t wait to add another Miyabi to my collection soon!

Great paring knifeThis is a great Japanese paring knife. I really like the feel of the handle on this blade, it’s very comfortable and contours nicely. This blade has a nice lighter weight to it, but is very sharp. This is a great intro paring knife if you want to go from Western style knives to Asian, with the Evolution, it brings the two styles together, making it a much more durable Japanese paring knife.

One of my most used knives in the kitchen! I always have this knife close at hand when I am working in the kitchen. I bake so I am constantly peeling fruits mostly, but some vegetables as well. It is perfect for peeling the fruits and it is super sharp so often I can get that peel off in one long piece! The three-rivet handle is very comfortable in my hand and make the small work easy!
