The Miyabi Black 5000MCD is a true work of art. The blade is constructed of micro-carbide powdered MC66 steel, which is ice-hardened to an impressive 66 HRC. This results in an exceptionally sharp and lasting edge. The blade is wrapped in 132 additional layers of steel, resulting in a beautiful flower damascus pattern.The handle of the Miyabi Black series is made from unique wood, black ash. The grain and color of the black ash contrasts with the damascus of the blade. The handle is crafted in a traditional "D" shape, providing optimal ergonomics for fatigue-free cutting in the kitchen.Handcrafted in Seki, Japan.

Rated 5 out of 5 by from The Miyabi Black series knives are not for everyone but if you're looking for an incredible Japanese knife this would be the right choice. The core is made of MC66 steel which is the hardest steel available. This means the razor sharp edge will remain that way use after use. The core is wrapped in an impressive 132 additional layers of steel to make the damascus pattern. The Black Ash used to make the handle is the highest quality. The serration is designed to puncture the crust of the bread and continue through the soft part with out crushing it.

I love how sharp this blade is, it slices through bread, fruit, pretty much anything like it’s butter, and doesn’t cause tearing or squishing as you slice. With the beautiful flower damascus design of the 133 layers of MC66 steel, you get an exceptionally sharp knife, while also having a durable blade thanks to it being ice hardened. These are some of the best Japanese knives on the market, not only for use, but aesthetically as well with the layered steel and black ashwood handles.

Rated 5 out of 5 by from Great line gets a great bread knife This serrated edge bread knife is nice and long. It is perfect for big large crusty boules and supersize heirloom tomatoes. Plus it is tough and it is hard. It will stand up to hours of work and hold an edge for months on end. That's because it has 133 layers of super-premium steel, ice hardened to 66 on the Rockwell. All that means to me is that I love cutting with every one of these knives. It is effortless. It makes my strokes elegant and I easily get into a rhythm when I am using a Miyabi Black. I love this line!

This knife will cut effortless though bagel, baguettes and fruits like melons and variety of breads. Blade is constructed of micro-carbide powdered MC66 steel, which is ice-hardened to an impressive 66 HRC. This is a knife that changes how knife should be used on a daily basis. Thi is a true work of art, a knife is so sharp and fancy however it is so versatile you'll enjoy its performance and functionality. Blade consists of 133 layers of steel, resulting in a floral Damascus pattern creates barrier between food and steel. This helps prevent food from sticking. Maple wood handle shows uniqueness in every pieces. It is so sharp and saves you time sharpening, its serration stays sharp. Overall, durable, sharp and ergonomic knife.

The knife is the hardest yet flexible knife I have. The beautiful handle is made from black ash and each knife handle has its own natural pattern thanks to mother nature. It will slice through even the most delicate crust without tearing - super important when we buy those expensive breads. MC66 MicroCarbide steel is hardened to 66 HRC

Rated 5 out of 5 by from superior bread knife This is a top of the line bread knife. The blade is made of 133 layers of steel with a super hard core. The blade is very sharp and cuts right through even the crustiest of breads. Its great for tomatoes, citrus and anything else with a tougher outside and a softer interior. The Ash handle is very unique and smooth. There is a lot of artistry and craftsmanship in this knife from the mosaic pin in the handle to the Damascus flower pattern on the blade.

Rated 5 out of 5 by from The serration on this knife cuts rather than tears the bread. Some bread knives tear the bread due to the serration and it creates dangley bits which are unsightly. I love the looks and the construction of this knife. These knives are handcrafted in Seki Japan with super steel and super ice-hardeneing which means they are sharp and stay sharp. I love this one and keep it out on my magnetic knife bar so that it is close at hand
