Miyabi Birchwood SG2 9-inch Slicing Knife is rated 4.9 out of 5 by 34.
Rated 5 out of 5 by from Ultimate Slicer The perfect slicing knife is sharp enough to cleanly slice through any meat or fish without tearing or changing the texture. This is that perfect knife. Scapel-like blade with its beautiful damascus design will not only slice cleanly but will hold its edge incredibly well. The birchwood handle is so unique. It is very comfortable with its traditional Asian D shape plus the birchwood material makes it very slip resistant. I love how the handle will become very personal as it absorbs oils from your hands and develops its own personality. If you want an authentic Japanese knife, end your search with Miyabi. They are made and sold in Japan as the premium knife.

Rated 5 out of 5 by from Sashimi - no sweat. Carpaccio - with ease. I fell in love with this Miyabi line the first time I picked one up. Miyabi Birchwood is a beautifully hand-crafted and made of the one of the best steels for kitchen knives. The smooth birchwood handle fits my hand perfectly; and the inset emblem is an elegant touch. But the part I really love is the blade. The exquisite flower patterned blades belie their hardness, their ability to keep an edge, their gleam. What a joy. And this slicing knife is the ultimate for raw fish and meats. Enjoy these knives for a lifetime.

Rated 5 out of 5 by from Incredibly Sharp Do you ever wonder how sushi chef's are able to slice and cut sashimi, sushi rolls and vegetables with perfection? Once you use this knife you'll wonder no more. This Slicing knife is incredibly sharp thanks to it's G2 steel core that is harder than other steel allowing it to be honed to a katana scalpel like sharpness and stay that way use after use. Then 100 layers of steel are added to create a beautiful damascus pattern topped off by the Birchwood handle that provides a nonslip, secure and comfortable grip.

Rated 5 out of 5 by from Amazing First up, this knife is evenly balanced. I cannot say the same for the knife being replaced. Secondly it is stunning and super sharp out of the box. 10 out of 10 a wonderful knife. This is slowly replacing a knife set that cannot pass a paper test. Needless to say - the differences are night and day. Miyabi Birchwood series are the best.

Rated 5 out of 5 by from A great slicing knife What a great slicer knife. The blade is beautiful, with 101 layers of SG2 steel, it is an amazing piece of art, and it slices so smoothly, like butter. The Birchwood handle feels so nice in hand, and looks perfect with the blade aesthetic. Miyabi makes wonder and durable Japanese knives, definitely one of the best slicers knives on the market.

Rated 5 out of 5 by from great laser slicer picked up the miyabi birchwood sujihiki for cutting meat and fish. fit & finish is impeccable, and the birchwood handle pops with a little bit of tung oil. its a laser, but will be a pain in the rear to sharpen if you dont have the proper stones. sticks a bit at first due to the mirror finish, but will release after a little use.

Rated 5 out of 5 by from This is the top of the line Japanese slicer that you need! It slices with ease without shredding to keep the food how you want it. Not to mention, it has a beautiful design that you will want to show off. The handle itself, is very comfortable and the Birchwood is great for making sure the knife is not slipping in your hand.

Hello ! can use this knife for sashimi? like yanagiba I'm wondering. Please answer and Merry christmas and happy new year

Asked by: JEONGMIN
Yes, this is very similar to a yanagiba (yanagiba is a very general term for a long knife with a thin blade profile). It will work well for any type of slicing. The birchwood series of knives is double beveled (sharpened on both sides), whereas many traditional sushi knives are single beveled, though for most people this might even be preferable.
