Surprisingly useful!I fell in love with this Miyabi line the first time I picked one up. Miyabi Birchwood is a beautifully hand-crafted and made of the one of the best steels for kitchen knives. The smooth birchwood handle fits my hand perfectly; and the inset emblem is an elegant touch. But the part I really love is the blade. The exquisite flower patterned blades belie their hardness, their ability to keep an edge, their gleam. What a joy.
I usually don't use a 6-inch slicing knife, but I grabbed it one day to skin a melon. it was terrific. I'm busy finding new uses for this knife everyday. I expect to enjoy this knife for a lifetime.

Definitely get one!Love this knife and Miyabi but my biggest complaint is all the unnecessary information printed on the left side of their blades it just detracts from the knife and almost ruins it

Excellent super sharp knife.It’s a beautiful knife. Very sharp. Sharpening is sometimes more difficult to get right due to the hardness of the metal. The handle has a nice feel to it but can feel a bit slippery at times. Overall a great knife. I personally prefer the utility knife design. I use it more than most of the other styles. The metal feels hefty and substantial so if you prefer lighter knives, this might not be a great fit. Retail price feels a bit more than I’d want for a utility knife but the quality makes it feel a bit more justified.

So Versatile!This utility knife is so versatile with its 6" blade, it may become your go-to knife. Many times the chef knife is simply too big, that's where this fills in. It's small enough to cut up small fruits and vegetables but large enough to carve meat. It is incredibly sharp and holds its edge really well.
I love the beauty of Birchwood with its Damascus design, but my favorite part is the handle. It is so comfortable and has a little grip from the wood. I love how it develops character over time with use.

beautiful prep knifeI love the Birchwood line.The wooden handles are each unique. They look better the more you use them. The Damascus style blade shows true Japanese artistry and craftsmanship. The high carbon blade stays sharp for a long time and is easy to maintain. They use the traditional Honbazuke method to give it a razors edge. I like this size for all my vegetable prep. I get nice thin accurate slices and it has good balance in my hand.

Just the right utility carving knife!This Birchwood 6" utility is good size for slicing and or carving meat. It's scalpel-like sharpness for its CRYODUR blade, ice-hardened to Rockwell 63, this knife core is made of SG2 micro-carbide powder steel. Beneath its beautiful exterior, the flower Damascus pattern provides added durability. This exquisite, hand-hammered effect helps prevent food from sticking. First attracted to this knife because of the sheer beauty. Gorgeous Birchwood handle coupled with a stunning 100 layer Damascus design made this knife a must have.
After using for several weeks, I've become amazed at how sharp the edge is, and how long it stays sharp. Nothing like any other knife I've ever used. Great for slicing, chopping, mincing, and peeling. I use this knife for just about everything!

what is the grind on the edge of these is it 50-50 or a more traditional one sided grind

These knives have a double bevel, they are sharpened to the same angle on each side. Miyabi knives are hand sharpened using a traditional technique, so this angle tends to be between 9.5 and 12 degrees per side.
