Rated 5 out of 5 by from This prep knife is a great addition to any knife collection. Perfect for all the small work that we tend to use our paring knives for. With the proper knuckle clearance, that paring knives don't have, this knife is perfect for mincing garlic and herbs, slicing small fruit and veggies and chopping shallots. The handle on these knives feel so secure and smooth in your hand and look absolutely beautiful over time. The 101 layer Damascus is stunning and gives the knife a nice balance. Super fine edge is very sharp and stays sharp with proper care and occasional sharpening.

Miyabi Birchwood is a beautifully hand-crafted and made of the one of the best steels for kitchen knives. The smooth birchwood handle fits my hand perfectly; and the inset emblem is an elegant touch. But the part I really love is the blade. The exquisite flower patterned blades belie their hardness, their ability to keep an edge, their gleam. And this compact prep knife is so convenient. It does small scale cutting swiftly and fluidly, but can be used on larger cutting and boning as well. What a joy!

Rated 5 out of 5 by from A prep knife is such a great "in between knife". It is perfect for when the parer is too small but the chef knife is too big. I've known several folks who this is now their go-to knife. It's perfecting for chopping smaller fruits and vegetables, or slicing meats and cheeses. The Birchwood design is a beautiful 100 layer damascus on top of SG2 steel. SG2 is a very hard steel known for its incredible edge retention. The birchwood handle is a traditional Japanese shape, perfect for smaller hands and has the awesome wood feel and look.

Rated 5 out of 5 by from A beautiful prep knife, I love this so much! This Miyabi Birchwood Prep Knife blades deliver scalpel-like sharpness. It's great for meat and vegetables cutting and slicing. Perfect for prepping variety of appetizers, fruits will appreciate this blade. Its potent core of SG2 micro-carbide powder steel is layered in a Tsuchime finish. CRYODUR blade, ice-hardened to Rockwell 63 Handle is so comfortable in your hand and love that D shape handle and it is fabricated with special Cocobolo Rosewood pakkawood.

Rated 5 out of 5 by from Great prep knife I love this prep knife. The blade is beautiful, with 100 layers of steel, it is an amazing piece of art, and it cuts so smoothly, like butter. The birchwood handle feels so nice in hand, and looks perfect with the blade. This is a great size blade if you want a smaller knife but still be able to slice and chop food on a cutting board. Miyabi makes wonder and durable Japanese knives, definitely one of the best prep knives on the market.

Made in Japan using Zwillings patented ice hardening process your Birchwood knife will resist corrosion, chipping and cracking. With an edge measured between 9.5 and 12 degrees it will glide effortlessly through your cutting tasks and retain it's razor sharpness use after use.

With the unique birchwood handle perfectly balancing out the knife, it is important not to expose it to too much water to avoid the wood from cracking.
