Truly outstandingThis knife is smaller than I expected - woulda been easily remedied by looking at a ruler. But it turns out I love the size (I do have rather small hands). The birch is breathtaking, but moreover, it makes for a light and perfectly balanced knife. It feels like an extension of your hand and makes prep work a joy. It is sharper than my mother’s tongue - which is to say it will hurt you if you don’t know how to handle it. Honestly the most pleasurable knife experience I’ve ever had. I’m cutting things that don’t need to be cut. I have loads of paper thin grape slivers and brunoisette carrots in case anyone needs some. Don’t think twice on this knife. You need it.

This prep knife is a great addition to any knife collection. Perfect for all the small work that we tend to use our paring knives for. With the proper knuckle clearance, that paring knives don't have, this knife is perfect for mincing garlic and herbs, slicing small fruit and veggies and chopping shallots.
The handle on these knives feel so secure and smooth in your hand and look absolutely beautiful over time. The 101 layer Damascus is stunning and gives the knife a nice balance. Super fine edge is very sharp and stays sharp with proper care and occasional sharpening.

Must have prep knifeI fell in love with this Miyabi line the first time I picked one up. Miyabi Birchwood is a beautifully hand-crafted and made of the one of the best steels for kitchen knives. The smooth birchwood handle fits my hand perfectly; and the inset emblem is an elegant touch. But the part I really love is the blade. The exquisite flower patterned blades belie their hardness, their ability to keep an edge, their gleam. And this compact prep knife is so convenient. It does small scale cutting swiftly and fluidly, but can be used on larger cutting and boning as well. What a joy!

A prep knife is such a great "in between knife". It is perfect for when the parer is too small but the chef knife is too big. I've known several folks who this is now their go-to knife. It's perfecting for chopping smaller fruits and vegetables, or slicing meats and cheeses.
The Birchwood design is a beautiful 100 layer damascus on top of SG2 steel. SG2 is a very hard steel known for its incredible edge retention. The birchwood handle is a traditional Japanese shape, perfect for smaller hands and has the awesome wood feel and look.

Wonderful, beautiful, and preciseThe second Birchwood series knife in our collection, purchased to compliment our chef’s knife. The build quality, fit, and finish are second to none. The blade and handle configuration are perfect, even for my thick large hands and fingers. It’s maintained a sharp edge and is easily sharpened, just like the chef’s knife. I’m so very pleased, it’s a joy to challenge myself to create more exacting cuts. It’s a perfect addition, bridging the gap between a chef’s knife and a paring knife. In fact, I no longer reach for my paring knife.

great prep knifeI love everything about this knife. The Birchwood handle is very smooth and comfortable to hold. The metal cap on the end and the red spacers and mosaic pin in the handle add a extra bit of elegance. The blade is super sharp. The high carbon steel stays sharp for a long time and is easy to maintain. The 101 layer Damascus design shows the true Japanese heritage and artistry considered when making this line. This is more evident in the watermarking by the blade, a tradition common to classic Katana blades.

Almost perfect.Awsomely sharp knife and offer great control for slicing off silverskin and making super fine cuts. It loses a star on the handle length. Its just a tiny on the shorter side for my hands. More aking to a 3in paring knife than a 5.5in blade. And the wood of the birchwood line, at least on this one, seems a bit rough for what I would have expected. I know its not a waxed and high polish type handle, but just seems to detract from an otherwise smooth looking and cutting knife.

Extremely sharp edge, this Miyabi Birchwood prep knife really gets a work out in my kitchen. Use for cutting, chopping and slicing, jobs big and small. The SG2 steel is extremely hard, which keeps the blade nice and sharp, and easy to sharpen. The 100 layers of Damascus adds to the authenticity of the Japanese design, as well as the D shaped handle which is made with a gorgeous Birchwood. The contrast of the two is outstanding which makes for beauty and function all in one.
