This kiritsuke is an all-purpose knife traditionally used only by the Executive Chef in Japanese kitchens. This double-beveled knife with angled tip is best suited to Japanese push or pull cuts and is a great sashimi knife, as it offers the finest in precision cutting. Its straighter edge makes it the ideal knife for chopping and dicing fruits and vegetables.

This is it!If you have been looking around for a high grade, professional precision blade, then you just found it. After many years of using very good German and Japanese steel in the kitchen that was perfectly satisfactory, I have now found the tool that I was hoping those other knives could be. Effortless, paper thin slicing of both large and small material is a joy with this fine tool.

KiritsukeI love everything about this knife. It is super hard, it’s really sharp and it’s thin and light. You can do some really big breakdown work with it and so super fine. Precise cuts. This is my new favorite knife. I’ve always been a fan of shun knives before this one. I won’t get another knife other than this moving forward.

Poor quality. Bad customer service.Received this knife as a gift. Unfortunately it arrived defective, the tip of the blade is bent and the heel of the knife protudes down making an uneven edge. Customer Service has been a nightmare to deal with. Until this is made right I do not recommend buying anything from the Miyabi line, or from zwilling in general.

Elegant Workhorse KnifeI recently gotten this knife from a Zwilling sale for 165$ and for the price it's very nice. Having spent so much on japanese knives already, rest assured this will be a nice knife for home cooking. A statement piece while not having to worry as a workhorse knife.
