Each knife features a hand-honed blade finished with a true katana edge, a homage to the samurai swords made in Seki centuries ago.Fabricated with special Cocobolo Rosewood pakkawood, the handles mirror the beauty of the blade. Sophisticated details include brass and red spacers, a mosaic pin and a stainless steel end cap. The attractive D-shaped handle is designed to nestle comfortably in your hand for tireless cutting. Rated 5 out of 5 by from Awesome Japanese Parer This paring knife is awesome. I love the look of this knife and how it has certain features that make it a true Japanese knife, like the mirrored finish aspect to the blade and the shape of the handle. I like that it’s a Cocobolo wood, really beautiful look that accents the blade perfectly. This knife peels through anything with ease and smoothness, clean slices and peels every time. It has a nice balance to it as well, and contours nicely in your hand. The steel is really solid for a Japanese knife, so I’m so worried about it chipping down the road.

I bake so I am constantly peeling fruits largely, but some vegetables as well. It is perfect for peeling the fruits and it is super sharp so often I can get that peel off in one long piece! The D-shape handle is very comfortable in my hand and make the small work easy!

The first attraction for me is the "hammered" blade; it's such a unque finish but it's also going to help keep food from sticking to the blade. The SG2 steel is very hard which guarantees it will have amazing edge retention. It also boasts that crazy sharp Asian edge angle. The rosewood handle has a nice round curve which fits very comfortably in your hand. If you are wanting an authentic Japanese knife, end your search with Miyabi. They are made and sold in Japan as the premium knife.

Rated 5 out of 5 by from Easy to manipulate; very fluid The handle is good size for me for a paring knife. I like something II can get a good grip on, and often times a paring knife's handle will be pared down (pun intended) as if your hand gets smaller when you cut smaller things. LOL. The handle and the blade on this knife are in the right proportion for me and my very average hands. The wonderfully sharp edge is a delight. I want one cut and done. No going back over old terrain.

Rated 5 out of 5 by from perfection The 3' paring size is really good for doing detail work or working with smaller veggies. I live to make lovely radish roses, and carving cornichons to perfection for presentations. Artisan is my favorite line in Miyabi because of the comfort of the handle, and the sharpness of the steel used in the blade. not to mention since presentation is everything, it is really just a beautiful knife.

Rated 4 out of 5 by from Beautiful This knife is beautiful, and very sharp. I just received it so can't comment on durability. One thing that makes it different, for better or worse I haven't decided yet. Is that the knife blade starts higher up the knife shaft than on other paring knives. And the handle is oval, so the combination makes it a little less stable than what I'm used to.
