Efficient and convenientThis is incredibly useful if you're only cooking for one or two. I've used it for salmon filets, salmon burgers, rockfish, good ol' burgers, and a few other things.
The heat and smoke are very easy to manage and cleanup is a breeze by grilling or smoking standards. You do have to understand more than your average household cook to use it right, and yes, it's easy to clean if you understand that stainless does NOT mean stain-proof...
I do see some less than positive reviews about these, but I have a strong impression that they aren't familiar with cooking with smoke and heat, nor what patina is.

A stovetop smoker that just works!This product works very well if used according to instructions. I had thought this was going to be a gimmick but no it definitely works and something I will use often. The key is to use fine wood chips and not over smoke. On my first attempt I smoked bison burgers with hickory for 20 minutes; too long as it turns out. Second attempt with lamb loin chops for 10 minutes was perfect, however. Both finished cooking on the grill.
Appreciate that the lid is very tight so virtually no smoke escapes until it is removed; pan bottom is robust and no signs of warping. Cleanup very easy. The whole process was surprisingly easy and quick. Typical Demeyere quality that I have come to expect.
It would have been helpful to include recipes or charts for how long to smoke various foods and what kind of wood to use.

I'm Getting That Smokey FeelingI have several stove top smokers. This is one of them. It does a good job, you just have to insure the wood chips (make sure they are real fine) don't get wet from the juices. A little foil on the bottom with the ends turned up will do the trick. I smoke salmon regularly for my wife. Since I cook on an induction top, this smoker makes good contact with the hob and works efficiently. You will have to experiment to get your desired smoke flavor.

InstructionsGot this as a gift. The only included information was about cleaning and avoiding burning yourself. I regularly smoke foods on a Weber kettle and a dedicated wood burning smoker. So I'll have a head start. Anyone who has never smoked before could be totally lost and maybe ruin food while learning. I assume that you have cooked with this so why not include a recipe book to get people started?

So Convenient to UseI don't want to invest in a large outdoor smoker but I LOVE smoked meats, veggies, cheese...so I thought I would give this stovetop smoker a try.
Not at ALL disappointed. It's just two of us usually so this is the perfect size to get my food smoked. Much much simpler to use than the big outdoor smoker. And great price for the results you get.

InfuriatedMy husband bought this for me for Christmas last year and I was so excited. I used it once and I became concerned because it was making cracking noises. It sounded like shooting! I pulled it off the burner and allowed it to cool. When I picked it up, the bottom fell off! I returned it as it was under warranty and 6 months later, I received the replacement. I used it once and the exact same thing happened! I was infuriated! I will return it again but will never buy another product from this company.

great smokes folksI dont have access to an outdoor grilling/smoking area. This indoor stove top smoker is great. The lid fits nice and tight so it keeps the smoke inside. Its very easy to use and clean. I really like to use it on vegetables. Tomatoes and peppers are brought to a new level with a touch of smoke.

I can't go wrong with any piece of Demeyere that I purchase and I love this stove-top smoker. I love to smoke vegetables and do so a few times a month and they come out tasting so good. You can use for meats, fish, seafood, as well, but I love the veggies! This moker does double duty as a steamer as well, so great value!

How smoky does the kitchen become? I have tried other stovetop smokers and was run out of the kitchen because of the smoke. Do you need to have an exhaust fan vented straight to the outside over your range?

I would recommend starting on low heat in order to see how much smoke is produced. The amount of smoke produced is also dependent on what is being smoked, and in what quantities.
