Classic Basil Pesto Cook with Ballarini
Makes 1-1/4 cups
1/4 cup pine nuts, toasted
2 medium garlic cloves
1/2 teaspoon salt
3 cups firmly packed basil leaves
1/2 cup extra-virgin olive oil
2 teaspoons lemon juice
1/2 cup grated Parmesan cheese
HOW TO MAKE IT
- Place the pine nuts, garlic, salt, basil, and olive oil in the large blending carafe. Cover and insert the tamper into the lid. Blend on the vegetable pre-program until the mixture is finely chopped and blended but not silky smooth, stopping about 30 seconds into the program and stirring with the tamper as needed.
- Scrape down the sides of the blending carafe and add the lemon juice and cheese. Pulse on low speed until combined.
- Variation: Try replacing all or part of the basil with your favorite tender herbs (such as parsley, cilantro, and tarragon) and/or greens (such as arugula, baby spinach, and watercress), and using toasted almonds or walnuts in place of the pine nuts.
