Makes 1-1/4 cups



1/4 cup pine nuts, toasted
2 medium garlic cloves
1/2 teaspoon salt
3 cups firmly packed basil leaves
1/2 cup extra-virgin olive oil
2 teaspoons lemon juice
1/2 cup grated Parmesan cheese


  1. Place the pine nuts, garlic, salt, basil, and olive oil in the large blending carafe. Cover and insert the tamper into the lid. Blend on the vegetable pre-program until the mixture is finely chopped and blended but not silky smooth, stopping about 30 seconds into the program and stirring with the tamper as needed.
  2. Scrape down the sides of the blending carafe and add the lemon juice and cheese. Pulse on low speed until combined.
  3. Variation: Try replacing all or part of the basil with your favorite tender herbs (such as parsley, cilantro, and tarragon) and/or greens (such as arugula, baby spinach, and watercress), and using toasted almonds or walnuts in place of the pine nuts.
