Description

Kanren, which means “connection” in Japanese, is a collection that beautifully illustrates the union of German engineering with Japanese craftsmanship. This workhorse knife is designed to do everything in the kitchen, including chopping, slicing, and dicing. The FC61 core is embedded in 48 layers of stainless steel which make up the unique Damascus pattern on the knife, protecting the blade from corrosion and chipping. The cutting edge is Honbazuke-honed in Seki, Japan, a three-stage grinding, sharpening, and polishing process that results in razor-like sharpness. With its curved bolster and comfortable black linen Micarta handle, this knife delivers the ultimate in ergonomic, fatigue-free cutting.

Rated 5 out of 5 by from Why not have a knife that basically does it all? This beautiful chef's knife is sure to be the favorite and the go-to in the kitchen for tackling any and all prep tasks. The ergonomic, black micarta handle offers incredible comfort and balance for the whole knife. In the middle, the innovative curved bolster will take your pinch grip to new heights as it is designed for control and optimal comfort as well. Lastly, the incredible Damascus blade ensures long-lasting sharpness and durability for years to come. This is meant to be the most used knife in the kitchen and that's why Zwilling made it one of the best chef's knife out there.

Rated 5 out of 5 by from Great knife! Packaging may cause damages to tip Beautiful and well balanced knife! I love how it feels and works perfectly. The first knife I received had a slightly bent tip, so I had to return it. I don’t exactly know why this happened, but I suspect it might have something to do with the packaging, as when receiving my replacement knife, I could hear the knife moving around in its packaging. Second knife looks great though! And to be fair, exchanging items was fast and easy. I’m looking forward to taking good care of the knife and creating great dishes for my family and friends. Thank you!

This is knife is not only beautiful with its Damascus blade, but it's razor sharp, true to Japanese knives. Unlike most Japanese knives, it's made of very durable, chip resistant steel that protects that thin, sharp edge. I love the western style handle that's comfortable and is made of Micarta that has the look and feel of wood, but is as durable as a synthetic material. The curved bolster, an innovative feature of the Zwilling Pro knives, makes it incredibly comfortable in every hand. This great chef knife will be a workhorse in your kitchen. Its incredibly sharp blade can chop, dice or slice any fruit or vegetable, and can comfortable slice meat too.

Rated 5 out of 5 by from Favorite tool in the kitchen I did a lot of research on the type of knife(s) I wanted to invest in, and I have no regrets with the kanren series. The steel is very strong, and the edge is razor sharp, so you end up with the best of both worlds. I am not worried about the tip or edge breaking from use, and the edge has stayed sharp with minor upkeep over the past 6 months of quarantine kitchen cooking abuse. The weight of the knife sits closer to the handle than the tip, which I like. There is a good weight to the blade, but not so heavy that you will get fatigued when cutting.

Rated 5 out of 5 by from If you could only have one knife in the kitchen it would have to be an 8" chef's knife, it can do anything in the kitchen. The Kanren 8" chef's knife is not only beautiful but functional. The core of the blade is made from FC61 and its surrounded by an additional 48 layers of steel which creates a beautiful Damascus pattern and extremely durable. Miyabi borrowed the curved bolster from Zwilling and added it to this knife. It is natural to hold with a pinch grip. The handle is made from black linen micarta and fits easily into any hand.

Rated 5 out of 5 by from incredible knife I absolutely love this knife. It's perfectly weighted, so smooth and beautiful with the 48 layers of Damascus. This is my go to knife for all chopping, slicing and mincing. German steel made in Japan is the best of the best. The innovative German bolster is extremely comfortable and perfect for the professional pinch grip. It's a step above the classic three rivet look and feel. The blade is superior, sharp, hard and durable. The micarta handle with the zwilling pin is another detail that is a step above. Get this knife!! It's amazing.

Rated 5 out of 5 by from The chef knife is the most used knife in the kitchen so you want that knife to be comfortable in your hand, you want it to be sharp and you want that sharpness to last. The Kanren chef knife is made of FC61 steel and goes through a special ice-hardening process which makes the knife hard, durable and razor sharp. The bolster is curved which supports the pinch grip and is fatigue-free so you can work and be safe and fatigue free! This knife is not only beautiful but also an example of what a great East meets West knife is made of.

Rated 5 out of 5 by from Excellent knife for someone considering transitioning to Japanese cutlery. Kanren has a 49 layer stainless steel blade with an acute edge angle. The three riveted symmetrical handle is more akin to a western knife. A curved bolster promotes a pinch grip for controlled cutting. Great weight and balance for all your kitchen cutting tasks.
