Perfect Paella pan! The cast iron is perfect for searing shellfish, and rice. Finishing it off in the oven creates a nice crispy rice crust which is a delicacy in our home! Double handles, makes for easy transport, and the Graphite Grey makes for a fantastic serving piece.
However, if you have a house filled with kids, and you want to make a ton of silver dollar pancakes, this is the pan for you. Large surface size, with the benefits of cast iron heating and browning, makes the pan more versatile than your typical stainless steel Paella pan. Love having one pan that can be put to so many different uses.

I LOVE this pan!
In a word, this paella pan is FANTASTIC! It's hard to beat the surface area this pan has for range top or oven cooking. If you have a high output range the entire surface becomes an active, even cooking surface, great for searing large amounts of foods at once. The grenadine is beautiful and looks great on the table, too. The cast iron holds heat really well, keeping foods warm at the table. I'm really happy to finally own this pan. The down side is if your range doesn't have high BTU burners the cooking area in the pan seems to be reduced somewhat to the center of the pan. I gave one as a gift and the recipient loved it, but hasn't enjoyed the same range top cooking surface that I have.

Perfection in a pan
This pan is a beautiful creation. It is large enough to fit four chicken breasts or steaks, or whatever you choose, without any crowding. The heat distributes nicely and the cleanup is easy. I love the handles that don't get in the way of anything else and allow it to go in the oven easily. I am excited to use it all the time and happy that I treated myself to this special gift. Thank you to Staub for their attention to detail and also for the beautiful packaging. Also thank you to ZWILLING for offering it a great price.

Multi-Use Large Fry Pan - Awesome!
This is for small family get-togethers. Perfect to feed 8-10 people entrees, 15+ for a side dish. The quality of the cast iron makes this perfect for almost all cooking styles - searing, pan-frying, deep frying, stews and curries, pasta bakes, rice courses -think paella, jambalaya, biryani. Cooks evenly and holds the heat nicely. The enamel coating, inside and out, makes for easy maintenance and cleaning. The handles on either side make this easier to move around and bring to the table.

The heating capability of these pans are amazing - they heat up quickly, evenly and retain heat all the way through the cooking process. The cocotte has self-basting spikes on the interior of the lid which collect and return all moisture back into dish, so nothing dries out and your flavor base stays balanced. Both pieces have Staub's famous black matte finish on the interior of the pans which creates an exceptional cooking surface that browns and sears perfectly. The pans can with stand temperatures up to 500F and can be used on any cooking surfaces, even your BBQ.

It’s gigantic!
Huge pan! But incredible heat distribution. Heavy but not ridiculous. However it does take up most of the cooktop...but that should be expected. Color is stunning.

Will browning meatballs or panko covered chicken breasts stick to the bottom of this pan?

The Staub Cast Iron 13-inch Double Handle Fry Pan is designed with Staub’s signature matte black enamel interior, which is excellent for browning, searing, and developing flavor. The enamel is not nonstick in the traditional sense, so foods like meatballs or panko-coated chicken breasts may initially adhere to the surface. However, once the pan is properly preheated and the natural searing process begins, the food will release on its own as a crust forms. To minimize sticking, we recommend allowing the pan to preheat on low to medium heat before adding oil, and then placing the food only once the oil is hot. Avoid moving the food too soon, give it a chance to develop that golden sear, and it will release more easily. This makes the pan ideal for both achieving crisp texture and building rich flavor. I've been receiving conflicting information about this STAUB fry pan. I need something I can sear beef in without any concerns about the enamel (550F+). Some pans list 482F, some list over 900F; what is this particular pan rated for?
