Best way to Roast a ChickenI have been using the beer can method for several years to roast chickens, great method.
I am a huge fan of Staub cookware and was the benefits if having a section of cast iron inside the chicken for quicker roasting.
I rubbed some oil on the outside of the bird, used some seasoning to stick to the skin and roasted at 325. The chicken cooked much quicker using the vertical roaster. I was also rewarded with some great roasting juices collected at the bottom of the roaster which I used for gravy and then broth in my leftover soup.
This is now my preferred method of cooking a chicken.

Beautiful for roasting chickens under 2kgI've been using this vertical roaster exclusively now for about a year - I used to make good chicken - now people rave about them! I rub the chicken with salt and herbs (including the interior), let it sit on the roaster in the refrigerator for several hours, then roast it on high heat (450) until done.
My only caveat is that you can probably put a chicken over 2kg on this roaster, but then you'll probably want to truss the legs and/or wings while in the 'fridge to prevent them from dripping/touching/etc. - once it goes in the oven, you might want to put a sheet pan on the shelf under the roaster if you are going to cook a larger bird - the diameter of the pan doesn't quite cut it for me.
Last bit of advice - put the chicken on the spit neck first and ensure that the legs are untrussed and pointed to the back of your oven when you are roasting for maximum enjoyment.

PERFECT ROASTED CHICKENThis awesome pan does a fantastic job roasting a chicken. It's made completely of enamelled cast iron so it heats up throughly but doesn't require seasoning and can be washed with soap and water.
The handles are wide so it's easy to move around even with a large chicken on it. The center is hollow cast iron which helps lighten the load but also speeds up the cooking process by cooking from the inside as well as the outside. It has a deep enough base that it captures all the juices without spillage but can also be used to add flavors such as beer.
I recently saw a cinnamon roll recipe that I'm anxious to try in it. Seems like the perfect pan for even cooking and delicious browning.

My family loves a well roasted chicken, and this vertical roaster cooks to perfection. When you stand the chicken up, instead of laying it flat, the resulting bird is moist and juicy with no basting, and with a delightfully crispy skin. The skin remains intact and does not stick to the roasting pan because it is upright. Perfect in regular and convection ovens, as well as outdoor barbeques. Can't wait use when roasting a nice fatty duck!

Most Succulent Chicken EverI love this piece, it took me a few weeks to make up my mind to buy this, man I am so happy that I did. The crispiest skin with the juiciest meat. I just made my first chicken roast a few days ago and posted pictures of it on social media. It was a big hit with so many people trying it immediately. I mean it is not even a week and I see everyone else is happy with their purchase. It is a must-have for a great chicken roast. Period.

I use to make beer can chicken all the time on the BBQ, never the oven because it was a bit messy, seriously good, but messy. Since I started using the vertical roaster, I can now make it in the oven or on the BBQ and it comes out so good!! Due to the cast iron heating and distributing the heat continually, it comes out juicy and with a perfectly crispy skin. I put small potatoes under the chicken to roast in the juices!

Great way to roast a chickenIf you've never roasted a chicken vertically, you are in for a treat because this is the best way to get the chicken skin crispy and the legs, that typically take longer to cook because of the dark meat, are closer to the heat source in the oven, so this also protects the delicate breast meat because it sits higher. The bowl at the bottom of the dish catches all the juices and you're able to make a gravy from that.

Perfectly roasted chicken! Every time.If you've ever had a chicken that looks beautiful on the outside but is under done on the inside, this roaster solves that problem, period. The cast iron carries the heat evenly to all parts of the chicken delivers a perfectly cooked, juicy bird. The bottom collects the juices for a pan gravy or au jus. It is perfect. Brine the chicken for the best results. Dishwasher safe for easy clean up.
can you use these on gas grills and kamado joe grills with indirect and direct heat if its under 500 degrees?

What is the difference between the graphite grey versus the black matte? Does one cook better than the other? Why the signifiant price difference?

Both will perform similarly. The Black Matte may promote additional browning for whatever put in the bottom (vegetables, etc). The Graphite Grey is currently on sale and the Black Matte is not, that is the only reason for the price difference.
