I love this size for a chicken and adding the vegetables to the pan with the chicken to roast in all the yummy juices from the chicken. I do a roast chicken weekly and they come out moist and golden brown every time! The vegetables are seasoned and roast along with the chicken and come out beautifully. It is nice to have cookware that makes you look like a culinary star!!

Rated 5 out of 5 by from This is my forever roasting pan. The cast iron really holds the heat, and gives great color to the poultry, meats, and vegetables I use it for. Can also go on top of the stove to create nice gravy and sauces. Made in France, this pan is made to last. Staub will not warp like my previous pan, is very easy to clean, withstands very high temperatures, and is a great serving piece. Love all these features which is why I recommend this to anyone sitting on the fence.

Rated 5 out of 5 by from perfect! Love this cast iron roasting pan! the texture inside gives me such a nice sear and the resulting caramelization. Cast iron maintains a very even temperature throughout cooking so I don't need to worry about sudden drops in temp when roasting. I have always used a carbon steel roasting pan in the past so I am used to a very heavy pan but I love this concept with the higher sides and the textured interior. Both materials will work well for differernt things.

This is a solid roaster, that maintains heat evenly, resulting in perfectly caramelized roasts, poultry and vegetables. Oven safe to 500 degrees, and also works great on my induction cook top for great gravy and pan sauces. Also doubles as a lasagna pan, sheet pan and baking pan. Easy to clean and looks great on the table. Well worth every penny.

It is one of those pieces of bakeware you won't want to put away after you clean it. I love that it works with any type of heat source and I didn't have to spend any time seasoning, I could put it right to work. Obviously, it is still new for me, but it feels like it will last forever, and I love a company like this that will stand behind their products!

Rated 5 out of 5 by from Ultimate Roasting Pan This is the perfect lasagna pan, among other things! The large, deep capacity leaves plenty of room without having to worry about overflow. Because the cast iron gets so hot, it creates a nice crisp to any dish. The inside and outside clean up very easy. Like with all my other Staub pieces, I simply love serving a dish in something this beautiful. Straight to the table and it stays hot due to cast iron's natural "stay warm" feature.

Is it safe to preheat this pan in the oven, prior to adding vegetables or other food and roasting? I know with some of the enameled cast iron products out there, they say that preheating them dry is not recommended.
