This knife is great for cutting, chopping and slicing. Dry Sharpened blade boasts scalpel-like sharpness and comfortably in the hand. It feels the same as the Nakiri and both are must have knife, wide blade helps scoop food from the cutting board. Indentions on the blade helps prevent food from sticking, this creates barrier between the food and the steel. It is made and handcrafted in Japan, fabricated from revolutionary FC61 fine carbide steel, Ice-hardened FRIODURx2 blade offers exceptional durability, cutting edge retention, and corrosion resistance. Hand washing is recommended.

Super lightweight, it has a nice balance to the knife, and won’t get heavy in your hand if you are slicing or chopping fish, meat, fruits or veggies for an extended period of time. The thin yet sharp and durable blade of the Koh does a nice job of slicing and cutting easily and smoothly. This is a great blade shape perfect for chopping, and this blade style is a great alternative to a Chef’s knife, which is typically considered your all purpose knife. If you’re looking for a traditional style Japanese knife, the Koh Santoku knife is for you.

Rated 5 out of 5 by from Ultimate Onion Knife...and so much more This santoku is the ultimate onion cutting knife! It has a thin blade that is so incredibly sharp that it slices through anything with ease. It's my favorite for onions because their outer surface can be slick, but this knife cuts straight through without slipping. Onions also require several different cuts, both rocking and chopping, and when done correctly, no tears and perfect, uniform pieces. Of course I use it for more than onions! It's great on any fruit or vegetables. The wooden handle is very comfortable, light and perfectly balanced. It's made from a new, durable steel, FC61, which is incredibly chip resistant. A key feature I'm starting to look for when buying Japanese knives.

Rated 5 out of 5 by from The santoku is one of the more popular knife styles. It is extremely useful for chopping, dicing vegetables and proteins. The wider profile lends a lot of stability, useful when cutting through large vegetables and hunks of meat. The Miyabi Koh santoku is a beautiful version of this all-purpose knife. It has a good weight, a sightly longer handle - useful if you use a full-hand grip, It is terrific for vegetable-centric cooking. It is my day-to-day knife. Its edge was designed to hold. The proprietary steel that the blade is made from, the way it is made and all the hand work used to finish, sharpen and polish it ensures that this knife will be a joy to use for a lifetime. Hone it regularly and hand wash, it will make you smile every time you pick it up.

Rated 5 out of 5 by from sharp blade I am very happy with this knife. The handle is uniquely shaped and very comfortable to hold. Overall it is surprisingly light. The blade is made of very durable steel that goes through a double hardening process making a blade that is durable and sharp. It is also very easy to maintain its sharpness. The blade has a thin profile giving nice thin and accurate cuts. There is a lot of thought and design that went into this knife right down to the traditional Katana style watermarking above the blade edge.

Rated 5 out of 5 by from Beautiful, light, and sharp! The MIYABI Koh Santoku Knife is my first Japanese knife. It is exceptionally sharp, beautiful, light (106g), and easy to handle. It is small enough to be transported and large enough to be used on a daily basis. The ergonomic handle design has a comfortable and secure grip. Straight out of the box, its edge makes slicing through any ingredient effortless. It is precise and clean cuts every time. The blade and the elegant handle make this knife a stunning addition to my kitchen.
