Handcrafted in Seki, Japan, a city renowned for the highest quality cutlery production, the Kaizen II collection boasts traditional Japanese craftsmanship combined with the best hardening technology and beautiful modern design.

The core, forged from resilient FC61 super steel, is protected by a stunning 48 layers of stainless steel. And MIYABI Kaizen II knives are as beautiful as they are functional. The blades’ gorgeous flower Damascus pattern is dramatically darkened through acid dipping. The double FRIODUR® ice-hardened blade makes for improved corrosion resistance and astonishing durability. Artisans hand-hone the blades using the venerable four-step Honbazuke method. This fine attention to detail translates into a work of art that is the ultimate in precision cutting.

The blade is balanced by a substantial D-shaped handle made of black pakkawood. Effortless to hold, the classic Japanese “D”-shape handle offers a comfortable grip for stress-free cutting. This striking handle truly matches the caliber of the blade.

Rated 5 out of 5 by from Perfect Slicing Knife You cannot get any better than the Kaizen II slicing knife. It has the scalpel-like sharp blade that will give you the thinnest slice you ever thought possible. Now it is made with a new type of steel, FC61, that is incredibly durable and chip resistant. It takes away all of the fear of damaging your true Japanese knife. It is incredibly beautiful with the layered Damascus blade. And the traditional Japanese handle fits perfectly in the palm of your hand, has the look and feel of wood, but the durability of a synthetic material. Easy to see why Miyabi knives are made and sold in Japan as premium knives too.

Rated 5 out of 5 by from Redesigned Kaizen II is a hit! If you liked the sharpness of the original Kaizen, but found the handle a little foreign, then it might be time to reconsider the Kaizen line. The handle and the bolster were beefed up to provide more feedback with a firm pinch grip. The 49-layers of steel are hand finished to an extremely sharp edge that holds. It has a double Damascus pattern that is stunning. This is the ultimate sashimi or carpaccio blade. One steady cut, one beautiful slice. Or put it next to your turkey at Thanksgiving, your ham at Christmas or your roast beef this Sunday.

Rated 5 out of 5 by from This is one of those knives that you get so excited to use you just might find yourself cooking roasts or fajitas just to have an excuse to pull it out. The core is made from FC61 steel and is wrapped in 48 additional layers for strength and beauty in the damscus pattern. FC61 steel is exceptionally hard so the cutting edge stays razor sharp use after use. The handle is a traditional Japanese D shaped handle which is comfortable, . This is not just for meat...I love to pull it out for birthday cake too!

Rated 5 out of 5 by from One great slicer! This 9.5" Kaizen II slicing knife great for cutting and slicing large meat, it is also ideal for pile of vegetables and fruits. A made in Japan FC61 is a fine carbide stainless steel of 61 Rockwell hardness is outstanding, a scalpel-like sharpness knife. This knife is exceptional in durability, cutting edge retention, and corrosion resistance. This knife is light and comfortable Pakka wood handle, it feels great in my hand.

Rated 5 out of 5 by from nice long blade I am very happy with this slicer. The handle is very comfortable to hold. Its a little bit thicker than the typical D shaped Japanese knife handle. The blade is long and thin, a little longer than the average slicing knife. The Damascus style layered blade provides precision slicing. The blade stays sharp for a long time and is easy to maintain. I love to use it for cooked meats and raw fish.

The Kaizen II has a beautiful blade and the Micarta wood handle feels really smooth in hand, and has a nice roundedness to it. With the blade having 48 layers of steel, you can really feel how much of a difference that makes when slicing fish, meat or produce. A great knife to have in the kitchen.

This knife slices into meat with ease, one stroke is all it takes and the cut is super smooth. Great for slicing very thin strips of raw meat and veggies.

Rated 5 out of 5 by from Best Slicer is the best I've ever used, I cannot believe how easily this knife cuts! if I didn't know better I'd say it was a razor because its razor sharp, razor thin and cuts like a razor! the lovely damascus pattern serves to make this incredibly sharp knife incredibly sharp in appearance as well!
