Handcrafted in Seki, Japan, a city renowned for the highest quality cutlery production, the Kaizen II collection boasts traditional Japanese craftsmanship combined with the best hardening technology and beautiful modern design.

The core, forged from resilient FC61 super steel, is protected by a stunning 48 layers of stainless steel. And MIYABI Kaizen II knives are as beautiful as they are functional. The blades’ gorgeous flower Damascus pattern is dramatically darkened through acid dipping. The double FRIODUR® ice-hardened blade makes for improved corrosion resistance and astonishing durability. Artisans hand-hone the blades using the venerable four-step Honbazuke method. This fine attention to detail translates into a work of art that is the ultimate in precision cutting.

The blade is balanced by a substantial D-shaped handle made of black pakkawood. Effortless to hold, the classic Japanese “D”-shape handle offers a comfortable grip for stress-free cutting. This striking handle truly matches the caliber of the blade.

Rated 5 out of 5 by from Redesigned Kaizen II is a hit! If you liked the sharpness of the original Kaizen, but found the handle a little foreign, then it might be time to reconsider the Kaizen line. The handle and the bolster were beefed up to provide more feedback with a firm pinch grip. The 49-layers of steel are hand finished to an extremely sharp edge that holds. It has a double Damascus pattern that is stunning. This longer chef's knife cuts like a smaller blade because it is so agile. Great for larger scale foods - large cuts of meat, a side of salmon One stroke is all you need. Super sharp.

Rated 5 out of 5 by from A step above Kaizen, the Kaizen 2 is made with FC61 steel which is extremely durable and a bit harder than the VG10 steel previously used. Made in Seki Japan, the Kaizen 2 also boasts all the qualities associated with Japanese knives, including sharper, more acute angle, thinner blade, and half bolster. The black pakkawood handle is D shaped which is also typical of Japanese design, and fits perfectly in the hand. Love the improvements in this knife and look forward to adding more to my collection.

The Pakkawood handle is very comfortable with the thicker than average D shaped handle. The Damascus style blade is beautiful to look at. The artistry in the layers highlights the Japanese craftsmanship put into this knife. The blade goes through a double hardening process giving a very sharp and durable blade with a very thin profile. It gives straight thin slices and cuts with ease.

Best of all, true to its Japanese heritage, it's a very thin blade and small edge angle which results in scalpel-like sharpness. The FC61 steel is extremely durable and chip resistant making it perfect for every task. The handle is durable as well, made from Micarta which is a linen and resin mixture. It looks and feels like wood and is extremely comfortable.

The Kaizen II has a beautiful blade with the 48 layers of the FC61 steel designed in a flower damascus pattern. The Micarta wood handle feels really smooth in hand, and has a nice roundedness to it. With the chef knife having the 48 layers of steel, you can really feel how much of a difference that makes when slicing fish, meat or produce. A great knife to have in the kitchen.

This Kaizen II is slightly different in steel with Kaizen I is a VG10 steel a gold standard for Japanese knife, outstanding inside out with a D shape handle. So, it is another must have Kaizen knife though Kaizen II has a more intirquit damascus pattern creating barrier between the setel and the food you cut. I liked the feel and touch of the handle while cutting food, it is are scalpel-like sharpness, so smooth. Perfect size for big chunk of meat or vegetables this knife covers everything. The core, forged from resilient FC61 super steel, is protected by a stunning 48 layers of stainless steel. Hand washing is recommended.

This blade has a core of FC61 steel and is protected by 48 layers of additional steel. It is also ice hardened so the knife stays sharper for a longer period of time. The knife glides through even the largest of prep projects. The handle is is a rounded D shape and fits comfortably in any hand.

The handle is very comfortable to use with it's slight curve that fits into my hand well. The blade has a intricate design that mimics the design of the handle. I love using this longer chef's knife because it gets through anything I can think of as well as being really sharp.
