Handcrafted in Seki, Japan, a city renowned for the highest quality cutlery production, the Kaizen II collection boasts traditional Japanese craftsmanship combined with the best hardening technology and beautiful modern design.

The core, forged from resilient FC61 super steel, is protected by a stunning 48 layers of stainless steel. And MIYABI Kaizen II knives are as beautiful as they are functional. The blades’ gorgeous flower Damascus pattern is dramatically darkened through acid dipping. The double FRIODUR® ice-hardened blade makes for improved corrosion resistance and astonishing durability. Artisans hand-hone the blades using the venerable four-step Honbazuke method. This fine attention to detail translates into a work of art that is the ultimate in precision cutting.

The blade is balanced by a substantial D-shaped handle made of black pakkawood. Effortless to hold, the classic Japanese “D”-shape handle offers a comfortable grip for stress-free cutting. This striking handle truly matches the caliber of the blade.

Rated 5 out of 5 by from Redesigned Kaizen II is a hit! If you liked the sharpness of the original Kaizen, but found the handle a little foreign, then it might be time to reconsider the Kaizen line. The handle and the bolster were beefed up to provide more feedback with a firm pinch grip. The 49-layers of steel are hand finished to an extremely sharp edge that holds. It has a double Damascus pattern that is stunning. This paring knife/utility knife hybrid is surprising useful. Slice through a sandwich. Supreme an orange. Cut open a mango. Peel a plantain. Nothing stops the glide of this sharp blade.

Rated 5 out of 5 by from Slightly larger than a paring knife This gorgeous Kaizen II knife is a little larger than a paring knife yet smaller than a standard utility knife making it equally perfect for small cutting tasks like small fruits and peeling as well as slightly larger ones like carrots and celery. The core is made from FC61 steel and you will immediately feel the difference of that razor sharp edge when using this knife. The damascus pattern is created by adding 48 additional layers of steel. The handle is a traditional Japanese D shaped handle but it has been made large and comfortable for either right or left handed people.

Rated 5 out of 5 by from I love this knife and how comfortable it is in my hand. The traditional D-shape is just the right size to feel like it was made for your hand. I can work for hours in the kitchen with this knife. I love the sharpenss which is due to the FC61 steel and the special ice-hardening process. This means, my knife will stay sharper longer, and last for years to come. Perfect size for the small to medium size fruits and vegetables or cutting up meat or poultry for chilis and stews.

The Kaizen II has a beautiful blade with the 48 layers of the durable and sharp FC61 steel that is designed in a flower damascus pattern. The Pakka wood handle feels really smooth in hand, and has a nice roundedness to it. With the Utility knife having the 48 layers of steel, you can really feel how much of a difference that makes when slicing fruits, meat or veggies. A great knife to have in the kitchen.

Rated 5 out of 5 by from Beautiful Blade and Handle The beautiful damascus blade is incredibly sharp true to its Japanese origin. It's made from FC61, a very durable and chip resistant steel. The D-shaped handle is the feature of Japanese knives for generations. It's made from Micarta which is a a linen and resin mixture. It has the look and feel of wood, but the durability of a synthetic material. A great knive for so many tasks from small fruits and vegetables to slicing meats and cheeses.

Rated 5 out of 5 by from Kaisen ll is one of my favorite Miyabi lines that we produce. I love the shape of the handle, not to mention the beauty of it, and how it fits in the palm of my hand. The Pakkawood design is gorgeous and is largely water-resistant. The blade is extremely sharp due to the FC61 steel and the ice-hardening process, which makes this knife very durable as well. I like this size for working with fruits and vegetables.

I have never had a sharper knife...or more beautiful. Completely, totally, and extremely happy with my purchase. Damascus-design on the blade creates barrier between the food and the steel, prevent food from sticking on the blade. Perfect size cutting and slicing medium food size such as vegetable, meat, fruits and herbs. A perfect gifting idea for a dear friend who loved to cook.
