The blades’ gorgeous flower Damascus pattern is dramatically darkened through acid dipping. The double FRIODUR® ice-hardened blade makes for improved corrosion resistance and astonishing durability. If you liked the sharpness of the original Kaizen, but found the handle a little foreign, then it might be time to reconsider the Kaizen line. The handle and the bolster were beefed up to provide more feedback with a firm pinch grip. The 49-layers of steel are hand finished to an extremely sharp edge that holds. It has a double Damascus pattern that is stunning.
This paring knife is easy in the hand. Nimble. Easy to core out a tomato, take the eyes out of a potato. Very popular knife.

great feel.....shap knifeThis is a great pairing knife. The blade is super sharp. The FC61 steel can be very thin but more chip resistant than most Japanese blades. It stays very sharp for a long time and is easy to maintain. The Damascus style patterning shows the craftsmanship that goes into Miyabi knives. I like this new updated handle over the original Kaizen line. The extra bulk in the handle makes it very comfortable to hold while working with small in hand tasks like peeling.

It's the perfect little parer! It is so incredibly sharp, you could carve a rose out of a radish; or perform a normal task like peeling an apple. The handle is round and smooth; no rivets, so it is very comfortable. It is made of micarta, which looks and feels like wood but is durable like a synthetic material. It is made from a very hard, chip resistant steel, FC61, so it will be very durable.

One of my most used knives in the kitchen! I always have this knife close at hand when I am working in the kitchen. I bake so I am constantly peeling fruits largely, but some vegetables as well. It is perfect for peeling the fruits and it is super sharp so often I can get that peel off in one long piece! The traditional D-shape handle is very comfortable in my hand and make the small work easy!

Great paring knifeThis is a really great Japanese Paring knife. The Kaizen II has a beautiful blade and the Micarta wood handle feels really smooth in hand, and has a nice roundedness to it. With the blade having 48 layers of steel, you can really feel how much of a difference that makes when peeling fruits and veggies. A great parign knife to have in the kitchen.

This beauty from Miyabi Kaizen is full of great features - Damascus pattern with 48 layers of steel, super sharp edge and thin blade, lightweight, so easy to handle. Great for a wooden cutting board. Beautiful wood handle, so comfortable and nice to hold. Really a veggie knife, but we use it for so much more!

Great paring and peeling knife!A paring knife with FC61 fine carbide steel blade core, is as sharp as scalpel and extremely hard. I love its stunning Damascus-design, preventing food from sticking to the blade. I am impress for its D-shape pakka wood handle, it feel great in the hand and I can grip this knife even for small cutting food.
