Rated 5 out of 5 by from My go-to workhorse. Stays sharp I. Have owned this knife for over three years and it is still my favorite knife in my kitchen. It is the only Japanese knife I own-all my other knives are Cutco, but I use this one nearly 90% of the time. It works for everything. I like that the weight ks between that of a western knife and a Japanese knife—sturdy enough to feel strong, but not so heavy as to tire you through long use. I find I need to sharpen it once a year. Regarding the rust spots-if you dry the knife with a towel and put it away after each use, it will not rust. ALWAYS hand wash and dry this knife… it is an investment and should be treated as such. Overall I couldn’t be happier with this knife.

Rated 5 out of 5 by from A great Japanese rocking santoku This is a great Japanese knife. I really like the feel of the handle on this blade, it’s very comfortable and contours nicely. This blade has a nice lighter weight to it, but is very sharp. This is a great knife if you want to go from Western style knives to Asian, with the Evolution, it brings the two styles together, making it a much more durable Japanese knife. The rocking aspect of this santoku is great, really an all purpose knife that you can slice, chop and mince extremely well with and with the blade having the grantons, that really helps with food coming off your blade much easier.

Rated 5 out of 5 by from I love Rocking A rocking santoku is the perfect knife for me. I am a rocker when I cut up veggies and this design helps me be super efficient. The incredibly sharp, razor edge slices through an onion so perfectly that there are no tears. The "dimples" on the blade help keep food from sticking. Evolution is an authentic Japanese knife; much of the process is done by hand. It is made from FC61 steel which is very hard (think great edge retention) but also extremely durable (very chip resistant). The curved handle is more like a German knife, especially with the durable 3 rivet design.

Rated 5 out of 5 by from Rock or chop I was already a fan of the Evolution line. The Japanese blade and the handle are a perfect combination. But this rocking santoku blade is amazing. It doesn't matter if you prefer to rock or chop. This blade offers a very fluid motion for both.

I have experience the beauty of sharpness with the Miyabi Evolution series, I owned a prep knife myself and it is scalpel-like sharpness and comfortably in the hand. Time-tested German engineering meets Japanese craftsmanship.

Love the versatility of being able to use it for both cutting with a rocking motion, as well was using the traditional Japanese up and down chopping motion. Very comfortable, and the FC61 steel that it is made with is very durable which adds to the benefit of working with this knife. This is a must have for anyone that loves to work in the kitchen with great tools!

Rated 5 out of 5 by from Great combination of east and west I love using santoku knives because I like the wider blade they have so that I can move more food from the cutting board to the pan at one time, but I also like the curve of a chef's knife, which is typically a western style knife, so it is easy to use a rocking/slicing motion and easy cut quickly and in one motion. This is a great compromise between those 2 styles and the handle is comfortable.

I can use it like my chef knife because there is a decent curve to the blade but the back half of the blade is fairly flat for easy chopping. It had those lovely little hollow spots that release food easily. The handle on the evolution line is so elegant, can be used for left or right handed people and is very non slip as well. Great deal on a great new style knife!
