Handcrafted in Seki, Japan, MIYABI Evolution merges German engineering expertise with Japanese craftsmanship for the utmost control and accuracy in every cut. This 5.5-inch utility knife is a workhorse knife in the kitchen for precision work in-hand or on the cutting board. This versatile knife is ideal for cutting up fruit, mincing garlic, and thinly slicing meat or poultry.
Crafted from superior quality fine carbide steel that is often used in razor blades, the knives offer the signature sharpness for which Japanese knives are known. A sophisticated six-step ice hardening technique unlocks the steel’s full potential guaranteeing these FRIODURx2® blades boast remarkable initial sharpness, cutting edge retention, corrosion resistance, and chip-resistant toughness.
Beautifully polished to a mirror finish, the blades have a katana edge reminiscent of the samurai swords forged in the same town centuries ago. Curved for comfort and thicker at the end to prevent slipping, the triple-rivet handles encourage fatigue-free cutting. A rounded spine, heel, and bolster, plus nine hand-finishing steps ensure these handles have unsurpassed ergonomics.

Another Utility Prep Knife!Evolution knife is exceptionally sharp, a medium-size but versatile 5.5" utility prep knife for me. It is enjoyable to cut and slice everything such as fruits, vegetables, meat, poultry, butter, cheese and even bread. It is better utility knife, it is about the same size as the prep knife and the curve handle is comfortable in the hand. This utility knife is narrower, flexible, and pointy end. It can be used for boning meat, tip of the knife can be used for poking holes in the meat and poultry for filling. Evolution knife is made from revolutionary fine carbide FC61 steel, these knives offer the signature sharpness for which Japanese knives are known. Hand washing is recommended.

great prep knifeThis is the ultimate prep knife. The size sits right between the paring and chefs knife. The handle is offset so it is useful in hand as well as on the cutting board. It is perfect for herb and vegetable prep. The blade goes through a double hardening process making a very strong sharp blade. The blade holds an edge for a long time and is easy to maintain. The Japanese craftsmanship is evident here all the way down to the Honbazuke sharpening method used and the Katana style watermarking along the blade edge. The Western style handle is very comfortable to hold.

A great Utility knifeThis is a great Japanese small utility knife. I really like the feel of the handle on this blade, it’s very comfortable and contours nicely. The blade has a nice lighter weight to it, but is very sharp. This is a great knife collection if you want to go from Western style knives to Asian. With the Evolution, it brings the two styles together with the German proprietary ice hardening technique of the FC61 steel, making it a much more durable Japanese knife. This is a really great smaller blade knife for slicing fruit and veggies with ease.

I love the sharpness of this Miyabi Utility knife and I love working with the authenitic slim profile blade but I especially like that the Evolution series has a western style handle that has a comfortable familiar feel. The blade is mirror polished FC61 steel which is so hard irt will retain the razor sharp fine edge use after use. A utility knife is a great size because it is useful for cutting fruits and vegetables....longer than a paring knife but smaller than a chef's knife.

Top notchVery Fine Japanese style utility knife. I fell in love with it the moment I saw it. The profile and quality is worth the price. Hopefully it can last a long time.

This utility knife is a nice extention of the paring knife. Designed for small cutting projects with knife will easily peel, pare, mince and dice small fruit and veggies. Very approachable, easy to care for and familiar in the hand. Made from superior FC61 stainless steel this knife is more chip and corrosion resistant than most Asian steels and will hold its acute edge angle longer as well. The POM handle is smooth and feels secure even when wet.

This knife has a little bit of Eastern flavor and a little bit Western flavor. It is made from FC61 fine carbide steel and ice-hardened twice which translates to exceptional durability, cutting edge retention, and corrosion resistance. The blade is dry sharpened creating a traditional Japanese scalpel-like sharpness. The handle is a Western 3 riveted style offering a comfortable grip even when working for long periods of time.

All Purpose KnifeEvolution is an amazing knife line! I've bought several for my sons who love to cook. They need knives that are super sharp but also durable. It's made from a new, super durable FC61 steel. It is incredibly chip resistant.
This little utility knife is a great addition. It can handle all of those smaller cutting jobs such as small fruits and vegetables, and it also works great for meats and cheeses.
