Description

The shotoh, which means “small sword” in Japanese, is a versatile knife that is slightly larger than a paring knife. It can be used for intricate vegetable work like peeling and creating garnishes as well as for cleaning and trimming meat and fish.

Top-of-the-line MIYABI Birchwood is a work of culinary art. Both the authentic, thin, Japanese profile blade and the wood handle are crafted from the most precious materials, which shape their striking appearance. More than meets the eye, the potent core of SG2 micro-carbide powder steel is protected by 100 layers of steel, for an exceptionally sharp and long-lasting edge that is highly corrosion resistant. MIYABI's innovative, ice-hardening process locks in the long-lasting sharpness of the CRYODUR blades. Beneath its beautiful exterior, the flower Damascus pattern provides added durability. Sharpening is done using the traditional, three-step Honbazuke method.

The scalpel-like blade is complemented by an equally striking Karelian (Masur) Birch handle. A prized material for knife handles, Karelian Birch is also the only wood ever used in a Faberge egg. Exquisite and ergonomic, MIYABI Birchwood knives feel as good as they look. Handcrafted in Seki, Japan.

Rated 5 out of 5 by from Hands Down the Best As a professional chef, I own several lines of the Miyabi knives. This birchwood utility is a work of art among art. Photos do no justice for how this wood looks in person. Very light and balanced. When trimming whole beef tenderloin, the blade slices effortlessly. When you work with this knife, you can feel and see the level of expertise that goes into making this knife and know without a doubt this was crafted by passionate hands.

Rated 5 out of 5 by from Valuable Addition This utility knife is a great addition to any home. Its shorter blade length makes it extremely versatile. Many people end up preferring it over the traditional chef knife. The birchwood handle is so unique. It is very comfortable with its traditional Asian D shape plus the birchwood material makes it very slip resistant. I love how the handle will become very personal as it absorbs oils from your hands and develops its own personality. The 100 layer damascus blade is made from a very sharp SG2 steel core that not only makes it very durable but incredibly beautiful. If you want an authentic Japanese knife, end your search with Miyabi. They are made and sold in Japan as the premium knife.

Rated 5 out of 5 by from Excellent Miyabi knife with amazing craftsmanship Simply a phenomenal knife. I first owned the birchwood chef’s knife and it’s a workhorse. Although more delicate in feel than western knives, it’s very easy to develop a preference for Japanese knives. The sharper steel requires a bit more care than other knives, but is worth it for the performance you get. The packaging is as nice as it is for every Miyabi knife. Beautiful black magnetic flap box. The birchwood handle is elegant and soft but grips well. I always like to condition the handle with a little mineral oil to give it some shine and keep the handle from drying out. The length is perfect for delicate activities such as paring and design, but is perfect for some heftier activities like vegetables and fish. Excellent! Highly recommend.

Rated 5 out of 5 by from Light as a feather, sharp as a scalpel I have loved this utility knife (shotoh) since I first took it out of the lovely case. Balanced, sharp, and beautiful. When not in my knife roll, it's in my home kitchen on a magnetic wood bar, looking stunning. My only knock is the excess printing on the blade opposite the Miyabi logo, it just looks busy. Also, highly recommended to treat the birchwood handle with some food-grade oil/wax to preserve it. It darkens it a bit, but the protection is worth it, and in a way it customizes it for you. Outstanding product!

The scalpel-like blade is complemented by an equally striking Karelian (Masur) Birchwood handle. It feels great in the hand, light and so comfortable. A professional chef/cook should have. A go-to knife and so sharp to cut food for It's potent core of SG2 micro-carbide powder steel, CRYODUR blade, ice-hardened to Rockwell 63, 101-layer flower Damascus design with katana edge.

Rated 5 out of 5 by from The Miyabi Birchwood line is one of my favorite and the utility knife is one of my most used knives in the kitchen. It is super sharp so can slice, dice, and chop with percision and it feels comfortable in my hand while using, which is very important. This knife is made of a super steel, SG2 and has gone through a special ice-hardening process. These processes are to create a durable and super sharp knife that stays sharp.

Rated 5 out of 5 by from beautiful, sharp. The knife is one of the most beautiful I've ever used! The birchwood paired with the damascus-clad steel come together really nicely. I've only used it a handful of times so far but the blade has held it's edge well so far! If I would have one complaint about it, it's that the birchwood handle doesn't seem too robust- seems like it may wear a bit faster than I would like! Maybe some oil or varnish might help.
