Rated 4 out of 5 by from Sublime handle feel and shape For a relatively short chef’s knife this has a full size handle that feels excellent in my hand. The handle has a taper at both ends and the top side has some subtle curves to it which I did not discern from the images. FYI, I have average U.S. male size hands. The spine is mildly rounded which makes a double handed chop more pleasant. I haven’t had the chance to use the knife for food prep yet. I did a few cuts through glossy magazine paper and they were smooth along the entire length of the blade. I also folded a piece of the paper over to make a rounded edge and the knife easily cut into that with both of them on a horizontal plane.

Rated 5 out of 5 by from Amazing Knife! Beautiful and Sharp. I am no chef but I cook on a daily basis. The Miyabi knife makes cooking a breeze. Using a professional knife makes all the difference in the world. A vast difference from all my old knives. I did extensive research on different knife brands and this one checked all the boxes. The only factor that you have to consider is that Japanese steel is thinner (for sharpness) so you must handle with care. These knives will potentially get chips if you use it to cut bone or tougher fruits like butternut squash. That being said, it glides through foods effortlessly. The handle feels great to hold for all cutting positions and looks beautiful. The craftmanship on my Miyabi knife is amazing and the attention to detail second to none.

It is very sharp due to the SG2 super steel and the special ice-hardening process that the super steel goes through. The result is a very sharp knife that will retain its sharpness for a very long time, which means less work for me! The D-shape handle fits snuggly in my hand which gives me control and comfort. Such a beautiful knife that is handcrated in Japan, and will become your pride and joy!!

The aesthetic of it is unique and different from other knives on the market, and functionality was definitely considered in its design. The handle is super comfortable to hold when slicing and chopping. The blade itself is beautiful and thinner than I thought, the cuts you can make with it are so clean and precise. I can cut a thin shaving of something just as easily as cutting a thick slice. This knife has become my new favorite tool in the kitchen for sure. Worth every penny.

Rated 5 out of 5 by from Beauty and Functionality This knife is stunning right out of the box. The immediate thing I noticed was its weight. This is not a light knife. The 6” version feels a bit handle-heavy but this seems to fade away with use. The 8” version of this knife feels a bit more balanced weight-wise. The fit and finish of this knife is superb. The edge seems to be extremely sharp right out of the box, which, is what I would expect of course given the quality of this blade. I cannot yet speak for it’s edge retention over a long period of time but, I expect it to be very good given it’s hardness. One of these knives will be a gift to my brother who is beginning his journey into his food passion and will hopefully stay with him for his whole life.

Rated 5 out of 5 by from Dependable Miyabi, How I Love Thee As long as you take care of your knives*, you will LOVE the Miyabi brand. Durable, lightweight, precise, and excellent edge retention. Cooking is my career and I always find myself reaching for a Miyabi as my favorite, sharpest knife from my roll. THIS model in particular has been the most comfortable for all-day use with noticeably less hand fatigue. I really love my purchase! * Proper care: Always hand wash knives. Use a honing steel in between uses. Wipe off frequently as you prep, never let food dry & crust up your blade. After hand washing, use a clean towel to carefully dry, then either use a blade protector/cover or return your knife to its original box. Lastly, take it in for regular professional sharpening.

Hi, I'm interested on a Miyabi Artisan 9.5 inches or the Mizu, both knives have the same blade, but the handle material is different, my question is if both handles are the same thickness D shape? The Artisan looks thicker on the middle of the handle.

For some reason the Mizu is a popular Handle because quite a few people like the evenness of the handle from the forging to the end cap. As the Artisan is a little bulkier and not as suitable for smaller hands. Although it does give a good grip if you have long fingers.

is the knife easily resharpened

These knives can be resharpened several ways. First, we recommend using a sharpening/honing steel every few times you use the knife. This does not remove any material and safe to do frequently. When the knives do need resharpening, you can use a series of waterstones, though this takes some practice. We do make a Miyabi pull-through sharpener that is designed specifically for these blades, it is perfect for touch ups. If you do not want to sharpen the blade yourself, we offer a sharpening service.
