MIYABI celebrates Japanese craftsmanship with Artisan. Using traditional methods and innovative techniques, these knives merge the past and present into an exceptional knife collection. The potent core of SG2 micro-carbide powder steel is layered in a Tsuchime finish. This exquisite, hand-hammered effect helps prevent food from sticking. Each knife features a hand-honed blade finished with a true katana edge, a homage to the samurai swords made in Seki centuries ago. Fabricated with special Cocobolo Rosewood pakkawood, the handles mirror the beauty of the blade. Sophisticated details include brass and red spacers, a mosaic pin and a stainless steel end cap. The attractive D-shaped handle is designed to nestle comfortably in your hand for tireless cutting. Handcrafted in Seki, Japan.

Rated 5 out of 5 by from The best slicing knife. This 9.5" slicing are great for slicing large chunk of meat, vegetables, fruits and can be a cake knife for its size. This is a sushi knife, not just a slicer or carving. It's scalpel-like sharpness for its CRYODUR blade, ice-hardened to Rockwell 63. It's the easiest to grab, a go-to knife and so sharp to cut food for It's potent core of SG2 micro-carbide powder steel is layered in a Tsuchime finish. Hand-hammered effect helps prevent food from sticking. Handle is so comfortable in your hand and love that D shape handle and it is fabricated with special Cocobolo Rosewood pakkawood.

Rated 5 out of 5 by from Carver perfection Just holding this knife puts me in my happy place! I absolutely adore the look and the feel of this knife in my hands. But beyond that, I have never had a knife do its job as efficiently and as smoothly as with this knife. The shape of this carving is perfect for every task that I do with a long profile knife. I can slice right thru the biggest of roasts or the thinnest salmon filet. This carver is pure genius and when you put it into the beautiful Artisan handle and blade you have reached perfection!

Rated 5 out of 5 by from Carving knives do not usually come with a block set so need to be added to most collections. But, that being said, they are very much needed. This longer blade can go the entire distance for your breasts in poulry and for larger roasts on the bone that need to be individually carved. This knife is super sharp due to the use of SG2 steel and a special ice-hardening process. This means that the knife is very sharp, stays sharp longer and is very durable for a Japanese knife. A must have!!

Rated 5 out of 5 by from Beautiful Carver I mostly think of my carving knife for special occasions and holidays when you have a beautiful turkey, ham or roast. This Artisan carver is the perfect holiday knife. It has a beautiful, unique wooden handle that fits perfectly in my hand. The blade is hammered from a super hard steel so it's incredibly sharp and holds that sharpness too. It's definitely going to be used more than for holidays or special occasions.

Rated 5 out of 5 by from Bring on the Turkey This is one beautiful slicer. The extra length of the blade creates gorgeous slices of meat that will fill a plate. This Artisan knife is made from SG2 high end steel. The SG2 core is surrounded by 64 layers of additional steel adding durability to the knife. I love the deep bellied handle, it fits perfectly in every hand, small or big. A perfect addition to your knife collection.

I especially love the hammered effect, so food doesn't stick when cutting.This slicer is great for meats, but don't limit yourself! Can be used for veggies, for cutting thru hard crust melons and squash and more. These are super sharp, stay sharp w/ a fine blade.

Rated 5 out of 5 by from Beauty and Function I have never seen a knife that was so beautiful and it is very sharp, showing the skilled craftsmanship of the artisans that made this knife. This knife is a little longer than other slicing knives I have used and that really helps get through large pieces of meat, like a whole turkey breast.
