Each knife features a hand-honed blade finished with a true katana edge, a homage to the samurai swords made in Seki centuries ago.Fabricated with special Cocobolo Rosewood pakkawood, the handles mirror the beauty of the blade. Sophisticated details include brass and red spacers, a mosaic pin and a stainless steel end cap. The attractive D-shaped handle is designed to nestle comfortably in your hand for tireless cutting. Handcrafted in Seki, Japan.

Rated 5 out of 5 by from Prep Away Artisan is a thing of beauty! The first attraction for me is the "hammered" blade; it's such a unque finish but it's also going to help keep food from sticking to the blade. The SG2 steel is very hard which guarantees it will have amazing edge retention. It also boasts that crazy sharp Asian edge angle. The rosewood handle has a nice round curve which fits very comfortably in your hand. A prep knife is such a great blade. It can handle those tasks that are too big for a parer but using a chef knife would just be overkill. If you are wanting an authentic Japanese knife, end your search with Miyabi. They are made and sold in Japan as the premium knife.

Rated 5 out of 5 by from A great Prep knife I love the look of this knife and how it has certain features that make it a true Japanese knife, like the mirrored finish aspect to the blade and the shape of the handle. I like that it’s a Cocobolo wood, really beautiful look that accents the blade perfectly. This prep knife slices and cuts through anything with ease and smoothness on a cutting board, clean slices every time. It has a nice balance to it as well, and contours nicely in your hand. The steel is really solid for a Japanese knife, so I’m not worried about it chipping down the road.

Rated 5 out of 5 by from Fabulous for fine work and cutting I love these prep knives for the smaller, finer tasks, like deveining shrimp as I did the other night. The super sharp edge cut through channel and, in the Artisan's case, the hammered tsuchime blade didn't drag the meat, it just glided right through. This is an excellent prep knife, great for slicing super thinly. I also like it to clean up meats and poultry -getting rid of the silver skin, the bits of fat. A great prep knife is worth it's weight in gold - no, worth twice it's weight.

Rated 5 out of 5 by from pro prep I love everything about this knife. The wooden handle is very distinct with the gold and red accents. It is also very comfortable to hold. The blade design is cool with part of it hammered and the lower portion sand blasted. The super hard high carbon steel stays sharp for a very long time and is easy to maintain. The blade shape is great for prep. It gives me a smaller knife for quick small prep but with an offset handle for use on a cutting board you dont get with a pairing knife.

It is very easy to sharpen and is compact enough to carry with you if you want to use it for something like a picnic. It is purchased at a reasonable price point for such a spectacular knife. The knife is also well balanced and the user needs very little to effort. It is a wonderful addition to any kitchen.

Larger than a paring knife but smaller than a chef's knife this size can tackle both jobs. The SG2 steel core is harder than other steel and will retain the razor sharp cutting edge longer. The Artisan collection has the hammered "Tsuchime" finish and pakkawood handle in the traditional Japanese D shape for a guaranteed comfortable cutting experience.

Rated 5 out of 5 by from This is a beautiful SG2 knife. The hand hammering on the blade is really stunning and makes food fall off the blade easily. D shaped handle feels smooth and secure and balanced in either the left or the right hand. Keeps its sharp edge for many uses with proper handling and occasional sharpening. Prep knife can be used for all of those small jobs such as shallots, garlic, citrus and mincing herbs.

I like to use this knife for longer vegetable such as eggplant, zucchini and cucumbers. It's a perfect peeler for melons.too. the hammered damascus pattern also aids in the release of food from the surface., Great tool
