White Bean Orzo with Spinach and Artichokes

INGREDIENTS
- 2 tbsp olive oil
- 1 sweet onion, chopped
- 4 cloves garlic, minced
- 1 cup orzo
- 2 cups chicken stock
- 2 cans white beans, drained and rinsed
- 1 lemon, zested and juiced
- Kosher salt, to taste
- 5 oz fresh baby spinach
- 1/2 cup marinated artichoke hearts, chopped
- 1/4 cup pine nuts
- 1/2 cup feta, crumbled
HOW TO MAKE IT
- Heat olive oil in a pan over medium heat.
- Add onion and cook until translucent. Add garlic and cook for another minute.
- Add orzo and toss to coat, toasting for a couple of minutes.
- Add chicken stock, beans, lemon juice, and salt. Cover and cook until orzo is al dente (about 20 minutes).
- Mix in the spinach and artichokes.
- Top with lemon zest, pine nuts, and feta. Serve warm.
