INGREDIENTS

  • 2 tbsp olive oil
  • 1 sweet onion, chopped
  • 4 cloves garlic, minced
  • 1 cup orzo
  • 2 cups chicken stock
  • 2 cans white beans, drained and rinsed
  • 1 lemon, zested and juiced
  • Kosher salt, to taste
  • 5 oz fresh baby spinach
  • 1/2 cup marinated artichoke hearts, chopped
  • 1/4 cup pine nuts
  • 1/2 cup feta, crumbled

HOW TO MAKE IT

  1. Heat olive oil in a pan over medium heat.
  2. Add onion and cook until translucent. Add garlic and cook for another minute.
  3. Add orzo and toss to coat, toasting for a couple of minutes.
  4. Add chicken stock, beans, lemon juice, and salt. Cover and cook until orzo is al dente (about 20 minutes).
  5. Mix in the spinach and artichokes.
  6. Top with lemon zest, pine nuts, and feta. Serve warm.
