INGREDIENTS

  • 1 lb gnocchi
  • 2 tbsp olive oil, divided
  • 2 tbsp butter, divided
  • 3 cloves garlic, minced
  • 1 cup asparagus pieces, blanched
  • 10 oz peas
  • 1 lemon, juiced and zested
  • 1/3 cup Parmesan cheese, plus more for serving
  • Salt and pepper, to taste

HOW TO MAKE IT

  1. Cook the gnocchi according to package instructions and drain.
  2. Heat a large pan over medium-high heat and add 1 tbsp olive oil and 1 tbsp butter.
  3. Add the cooked gnocchi to the pan and sauté until golden brown.
  4. Add the remaining olive oil and butter, followed by the garlic. Cook until fragrant.
  5. Stir in the asparagus, peas, and lemon juice and cook for a few minutes to combine flavors.
  6. Season with salt and pepper to taste.
  7. Turn off the heat and top with lemon zest and Parmesan cheese.
  8. Serve immediately with extra Parmesan, if desired.
