Gnocchi with Asparagus and Peas

INGREDIENTS
- 1 lb gnocchi
- 2 tbsp olive oil, divided
- 2 tbsp butter, divided
- 3 cloves garlic, minced
- 1 cup asparagus pieces, blanched
- 10 oz peas
- 1 lemon, juiced and zested
- 1/3 cup Parmesan cheese, plus more for serving
- Salt and pepper, to taste
HOW TO MAKE IT
- Cook the gnocchi according to package instructions and drain.
- Heat a large pan over medium-high heat and add 1 tbsp olive oil and 1 tbsp butter.
- Add the cooked gnocchi to the pan and sauté until golden brown.
- Add the remaining olive oil and butter, followed by the garlic. Cook until fragrant.
- Stir in the asparagus, peas, and lemon juice and cook for a few minutes to combine flavors.
- Season with salt and pepper to taste.
- Turn off the heat and top with lemon zest and Parmesan cheese.
- Serve immediately with extra Parmesan, if desired.
