INGREDIENTS

  • 1 head of broccoli, diced & blanched
  • 1/2 cup extra virgin olive oil, divided
  • 2 teaspoon smoked paprika, divided
  • Salt & pepper, to taste
  • 3 roasted whole red bell peppers
  • 1/2 cup fire roasted tomatoes, strained
  • 1/2 cup almonds
  • 2 tablespoons sherry vinegar
  • 2 cloves of garlic
  • 1 pinch cayenne pepper (optional)
  • Splash of water
  • Crumbled feta, to garnish
  • Toasted pine nuts, to garnish

HOW TO MAKE IT

  1. Preheat the oven to 375°F.
  2. On a lined baking sheet, toss together broccoli, 3 tablespoons olive oil, 1 teaspoon smoked paprika, salt & pepper. Roast until crispy, about 20 minutes.
  3. To the hand blender measuring cup, add in peppers, tomatoes, remaining olive oil, almonds, vinegar, garlic, remaining paprika, cayenne pepper (optional), salt, pepper & water. Puree until smooth.
  4. Transfer mixture to a serving bowl. Top with broccoli, crumbled feta & toasted pine nuts.
