Roasted Broccoli with Romesco Sauce
Serve this crispy roasted broccoli over smoky romesco sauce, topped with crumbled feta and toasted pine nuts, for a delightful appetizer.

INGREDIENTS
- 1 head of broccoli, diced & blanched
- 1/2 cup extra virgin olive oil, divided
- 2 teaspoon smoked paprika, divided
- Salt & pepper, to taste
- 3 roasted whole red bell peppers
- 1/2 cup fire roasted tomatoes, strained
- 1/2 cup almonds
- 2 tablespoons sherry vinegar
- 2 cloves of garlic
- 1 pinch cayenne pepper (optional)
- Splash of water
- Crumbled feta, to garnish
- Toasted pine nuts, to garnish
HOW TO MAKE IT
- Preheat the oven to 375°F.
- On a lined baking sheet, toss together broccoli, 3 tablespoons olive oil, 1 teaspoon smoked paprika, salt & pepper. Roast until crispy, about 20 minutes.
- To the hand blender measuring cup, add in peppers, tomatoes, remaining olive oil, almonds, vinegar, garlic, remaining paprika, cayenne pepper (optional), salt, pepper & water. Puree until smooth.
- Transfer mixture to a serving bowl. Top with broccoli, crumbled feta & toasted pine nuts.
