INGREDIENTS

  • 1 cup unsalted butter, softened
  • 8 oz cream cheese, softened
  • 2 cups granulated sugar
  • 5 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 2 cups diced strawberries
  • 3 tablespoons granulated sugar

HOW TO MAKE IT

  1. Preheat oven to 325°F. Grease & line a 9-inch loaf pan.
  2. Using the a hand mixer, cream together butter, cream cheese & sugar until fluffy.
  3. Add the eggs & vanilla extract, beat until well incorporated.
  4. Sift in the flour, salt & baking powder. Mix until batter comes together.
  5. Transfer to prepared loaf pan & bake until the top bounces back to touch, about 35 to 45 minutes. Let cool completely before slicing.
  6. For the strawberry sauce, add strawberries & sugar to a skillet over low heat. Cook until the strawberries begin to soften, about 5 to 8 minutes.
  7. Transfer to a hand blender measuring cup & puree until smooth.
  8. Pour sauce over sliced pound cake & enjoy!
