Cream Cheese Pound Cake with Strawberry Sauce

INGREDIENTS
- 1 cup unsalted butter, softened
- 8 oz cream cheese, softened
- 2 cups granulated sugar
- 5 large eggs, room temperature
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking powder
- 2 cups diced strawberries
- 3 tablespoons granulated sugar
HOW TO MAKE IT
- Preheat oven to 325°F. Grease & line a 9-inch loaf pan.
- Using the a hand mixer, cream together butter, cream cheese & sugar until fluffy.
- Add the eggs & vanilla extract, beat until well incorporated.
- Sift in the flour, salt & baking powder. Mix until batter comes together.
- Transfer to prepared loaf pan & bake until the top bounces back to touch, about 35 to 45 minutes. Let cool completely before slicing.
- For the strawberry sauce, add strawberries & sugar to a skillet over low heat. Cook until the strawberries begin to soften, about 5 to 8 minutes.
- Transfer to a hand blender measuring cup & puree until smooth.
- Pour sauce over sliced pound cake & enjoy!
