Crispy Gnocchi Pasta Salad
A vibrant and flavorful gnocchi salad, featuring crispy gnocchi, juicy cherry tomatoes, and creamy bocconcini, all tossed in a zesty lemon garlic dressing; perfect served chilled on a warm summer day, or served warm on a cold winter evening.

Ingredients:
For the dressing:
- 2 cloves garlic, freshly grated
- 1/3 cup pecorino romano cheese, freshly grated
- 1/3 cup extra virgin olive oil
- 3 tablespoons cup lemon juice
- 1 teaspoon oregano
- Salt & pepper, to taste
For the salad:
- 3 tablespoons olive oil
- 1 lbs gnocchi
- 1 pint cherry tomatoes, halved
- 1 small red onion, sliced
- 1 cup mini bocconcini
- 1/2 cup whole black olives
Directions:
- Combine dressing ingredients into small mixing bowl. Whisk together until combined. Cover and refrigerate until ready to use.
- To a skillet over medium heat add olive oil & gnocchi. Cook until the gnocchi is golden & crispy, about 5 to 8 minutes.
- Transfer gnocchi to a large mixing bowl followed by cherry tomatoes, red onion, bocconcini & olives.
- Add the dressing & toss until well coated. Serve warm or chilled.
