Product packaging arrive opened/damaged.The Classic 5.5 boning knife seems to perform well when slicing beef & deboning chicken. Only time will tell on the longevity of the knife as the product packaging arrived opened/damaged. Perhaps the knife was opened/used (I hope not..) & subsequently returned to the retailer or perhaps the product packing was damaged by the delivery service?? That being said, I'm deducting 1 star & giving it a 3 stars instead as I would expect that the packaging be unopened/undamaged based on the price paid. I ended keeping the knife as it didn't seem worth the hassle to return the knife with hopes that the manufacturer would warranty the product should future issues arise.

I've used this knife for years! Love it!A good boning knife is important to me. I like to break down a whole chicken so I can make bone broth. This is a good boning knife. I've had a set for more than 20 years. And by far this is the most used knife in the set (I like to bounce around with the other knives.)
Henckels Classic knives are forged from quality steel. They have a triple riveted handle, a comfortable integrated bolster. Even if they aren't made in Germany, the steel is, and their quality is unquestionable. I have been able to sharpen and re sharpen (and hone) this knife many times over the years. It takes an edge and holds it (a sign of quality steel), so I can get through a chicken pretty quickly.

Just right for smaller handsThis knife is flexible but not floppy. The handle is sturdy and has a spot that prevents my finger from accidentally sliding into the blade. I have decided to reduce my kitchen knives to only a few essentials. This knife is one of them. I had looked at this knife for several months but it was a whopping $100. Right after Christmas, I was able to purchase this product at a 40% discount which made it more affordable. I’m very pleased to add this knife to my carefully chosen minimal collection of knives.

Well priced boning knife. Made with German steel, manufactured in Spain helps keep prices low without compromising quality. This boning knife is the perfect tool to help fabricate poultry. I purchase whole chickens, especially when on sale, and break them down into skinless boneless breasts and thighs. Fast and professional results, and fifty percent cheaper than having your butcher do this for you. Bonus drum sticks, wings, and plenty of great bones for stock.

excellent boning knifeThis is a great boning knife at a great price. The forged German steel and Spanish construction provide a strong sharp blade that stays sharp for a long time. The thin profile of the blade allows me to get in close to the bone without much waste. The three rivet handel and full bolster allow me to have a comfortable strong grip while working with this knife.

Great way to up your knife skills!I wanted to start to break down my own chickens instead of buying the pieces already seportated, so I was looking for a boning knife that won't break the bank, but also was the highest quality for my money. This is definitely the knife that fit the bill and is so sharp that I am getting better and better at butchering!

Great knife, great priceThis is a great boning knife because it's sharp and flexible which makes removing meat from bones a piece of cake. The fine edge blade is forged from high carbon German steel so I know it's going to stay sharp and be extremely durable. It's made in Spain so it is easier on the pocketbook without sacrificing quality.
Does this knife have a rigid or flexible blade. I'm trying to replace my old JAH rigid-blade boning knife and want one that is also rigid.

Does the classic 5 1/2 inch boning knife ever need sharpening? If it does, how is it done.

Yes. This knife has a fine edge that will need to be sharpened eventually, but when depends on usage. We always recommend using a honing steel often, perhaps every few times you use the knife, or if you feel it getting slightly dull. This will prolong the amount of time between sharpenings. When the knife needs to be sharpened, you can use a sharpening stone, a pull-through sharpener, or bring it to a professional sharpening service.
