INGREDIENTS

  • 500 g all-purpose flour
  • 180 g sugar
  • 250 g cold butter
  • 2 medium eggs

Additionally

  • All-purpose flour for working

For Rascals

  • approx. 250 g red currant jelly
  • approx. 200 g pistachio cream
  • Powdered sugar for dusting

For Terrace Cookies

  • 250 g powdered sugar
  • 3–4 tbsp lemon juice
  • 1–2 tbsp milk
  • Festive sprinkle decorations

HOW TO MAKE IT

  1. Add the flour and sugar to a ZWILLING FRESH & SAVE BOWLS M bowl. Drop in the cold butter, cut into small pieces, and the eggs. Mix with a hand mixer, such as the ZWILLING XTEND, until a smooth dough forms. Knead briefly by hand if needed.
  2. Shape the dough into a ball and vacuum seal it in the bowl. Chill for at least half an hour. Longer chilling makes the dough easier to handle.
  3. Preheat the oven to 180°C (top and bottom heat). Line the baking sheets with parchment paper.
  4. Take half of the dough from the refrigerator and let it sit for a moment to soften slightly. Roll it out on a lightly floured surface with the STAUB Rolling Pin until it is about 3–5 mm thick.
  5. Cut cookies into your preferred shapes and place them on the baking sheets, leaving space between each one. Depending on thickness, bake for about 10–12 minutes until they turn golden. Allow them to cool completely.
  6. Repeat with the second half of the dough. Gather any scraps, knead together, chill briefly, and roll out again.
  7. For the Rascals, gently heat the red currant jelly in a small pot. Brush a quarter of the cookies with the warm jelly and top each with a matching cookie. Stir the pistachio cream until smooth, spread it on half of the remaining cookies, and sandwich them together. Dust with powdered sugar.
  8. To finish the terrace cookies, sift the powdered sugar and mix with lemon juice and milk to create a thick glaze. Brush the cookies with the glaze, sandwich them, and decorate with festive sprinkles as desired.
