COUSCOUS SALAD WITH ZUCCHINI AND FETA
This salad is so easy to make and an absolute highlight for every BBQ buffet! The fresh and yet smart taste is perfect for a summer barbecue party.

Ingredients
- 1 cup of couscous
- 400 ml vegetable broth
- 2 small zucchini
- 1 pepper
- 100 g feta
- 1 teaspoon curry
- 1 teaspoon paprika powder
- 1/2 teaspoon cumin
- 50 ml lemon juice
- Fresh mint
- Sea salt
- Pepper
- Olive oil
Preparation
- First mix the couscous with the spices.
- Bring the vegetable broth to the boil and add the seasoned couscous. Allow to swell briefly and leave covered without heat.
- Slice the zucchini diagonally. Brush with olive oil, season with salt and pepper and then grill until dark brown.
- Season the couscous with salt, pepper, lemon juice and olive oil and cut the peppers into strips.
- Fold the grilled courgettes and peppers into the couscous with some chopped mint.
- Finally, put everything in a serving bowl and crumble the feta on top. Garnish with fresh mint
