Grilled Pineapple

INGREDIENTS

  • One medium pineapple
  • 100 g. Brown sugar
  • 100 g. butter
  • 1/2 cup pineapple juice
  • Half a lime
  • A teaspoon of cayenne pepper
  • fleur de sel

HOW TO MAKE IT

  1. Peel the pineapple and cut in half vertically. Remove the stalk and cut the flesh into slices about one inch thick. Put aside. Heat the sugar in a saucepan over medium-high heat. Once the sugar is caramelized, add the pineapple and lime juice to deglaze. Simmer for 5 to 10 minutes until the liquid has evaporated and a brown caramel is formed. Cut the cold butter into cubes and stir into the caramel with a whisk. Add the cayenne pepper and fleur de sel to taste. Preheat the grill and add the pineapple. Reduce the heat and cook on both sides, brushing with the caramel. Cook the caramelized pineapple slices for about 5 to 10 minutes.

Tip:

Serve on a plate with fresh mint, coconut ice cream and caramel sauce.
