INGREDIENTS

  • 1 zucchini
  • 1 red pepper
  • 1 eggplant
  • 1 red onion
  • 1 clove of garlic
  • 1 sprig of rosemary
  • 3 sprigs of thyme
  • 2 tbsp olive oil
  • Salt pepper
  • 100 g feta, to taste

HOW TO MAKE IT

  1. Clean and wash the courgettes, peppers and aubergine and cut everything into pieces of the same size. Peel the onion and garlic. Cut the onion into thin wedges and finely chop the garlic. Add both to the vegetables. Wash the rosemary and thyme, shake dry, pluck off the needles or leaves and chop.
  2. Add the rosemary and thyme to the vegetables along with the oil, season generously with salt and pepper and mix thoroughly. Distribute the vegetables evenly on the grid of the hot air fryer and cook at 180 °C for approx. 18-20 minutes, depending on the size of the vegetable pieces.
  3. At the end of the cooking time, season again with salt and pepper and serve warm, sprinkled with crumbled feta, or enjoy cold. Serve with a fresh baguette or ciabatta.

The vegetables can be varied according to taste and season.
