Traditional non-stick coatings

Pans with a traditional non-stick coating are ideal for gently frying pancakes, omelets, or fish dishes with little fat at temperatures up to 230 °C. The tried-and-tested plastic-based coating ensures/guarantees excellent non-stick properties and easy cleaning. To preserve the coating, please use only plastic or wooden spatulas to turn the food.

Enamel coating – the ultimate all-rounder

The enamel coating, mainly found on cast iron cookware, is exceptionally hard, extremely scratch-resistant, and can endure very high temperatures. Its slightly rough surface structure ("micro-grill dots") allows for hot, crispy searing and gentle braising, creating perfect roasts as a base for delicious sauces. The glass-like enamel coating makes our cast iron pans collector's items that can last for generations.

Uncoated pans

An uncoated pan is a pan for life and virtually indestructible! Mostly made from 18/10 stainless steel, these pans are an essential kitchen staple. Their strength lies in searing at very high temperatures, making them a must-have for steak lovers. With the proper technique, even fried eggs won’t stick. Our stainless-steel pans are also scratch-resistant for worry-free frying.

MORE TIPS FOR WORKING WITH COATED PANS

Heat your coated pan slowly on a medium heat and use low or medium temperatures when cooking (2/3 of the maximum stove power). Do not use oil sprays when frying. They cause residues that are difficult to remove from cookware. With regard to cleaning: It is best to clean non-stick cookware by hand.

The following is important regarding temperatures: The non-stick properties will wear off after a time with normal use. Over-heating and burning food can accelerate this process. The pan can still be used safely. Your ZWILLING pan with non-stick coating is suitable for ovens up to 230°C and for ceramic coatings up to 200°C, with a plastic handle up to 150°C.
