I am well trained on a honing steel and a sharpening stone but it takes time and the results aren't always perfect. Also if you use an electric sharpener there is a good chance that the blade will scratch and unnecessary steel is removed from the blade. This is quick, the learning curve is short and the results are perfection every time! Anyone can get a professional edge on their knives now that this product is on the market. So if you like your knives sharp and don't like the hassle of using a stone or going to someone to sharpen them for you.....buy this! You will love it!!

Rated 5 out of 5 by from Genius invention I have both German and Japanese knives and am always confused about the angle of the edge and which sharpeners would be appropriate. This sharpener can accommodate both. It also has course and fine grits depending on the dullness of your knives. I like how the extra cartridges are stored in the bottom. I haven't had it long, so I'm still get comfortable with it. But it definately works! I like the video posted on Zwilling.com to reinforce the directions included. Great size, doesn't take up much storage space.

Rated 5 out of 5 by from I LOVE a sharp knife I hate when my knives get dull; when the honing steel is quite doing the job anymore. I have a whetstone, but am not extremely proficient at it. This sharpener is the answer!! I've only had it a few weeks, but it does a fantastic job. I can hone or shapen my German or Japanese knives very easily. If they are just a little dull, I use the fine grit. If they are really dull, I switch to the coarse grit. My first knife was my santoku which actually has an angle more like Japanese knives. I used the smaller angle and it's as sharp as it was when it was new. I told my kids to bring their knives over and I would sharpen theirs too since it's so easy. The love the handy storage underneath for the angles and stones. Plus with the trim design, I don't mind leaving it out on the counter.

You won’t regret it, you get the same results as though they were just professionally sharpened. Suitable for both the German and Japanese blades in your collection.

I did a short presentation with a dull knife and it cut like a scalpel after few glides. It was a successful presentation and sold to every customer who'd asked about it.

Rated 5 out of 5 by from V edge sharpener excellent By mistake I put the review with the rods instead of with the sharpener I would just like to say the function the ease of changing out the rods everything was well thought out you could put this in a professional kitchen where they cook for people,and be able to keep your knives perfectly sharpened what a great sharpener I have a friend that loaned me one to check out as soon as it comes back in stock I’m buying one it’s sold me instantly After using it John.

Will this work for 15° Asian serrated knives.

How do I know whether to use a Japanese or western edge??????

All of our Henckels International and most Zwilling/Twin styles are Western (15°). Santoku knives in all brands are Japanese (10-12°). Zwilling Diplome, Twin 1731, and all Kramer and Miyabi knives are also 10-12°.
